  • 1 tbsp sugar
  • 1/2 tsp salt
  • 1/4 tsp nutmeg
  • 1/2 cup cold unsalted butter, cubed
  • 1/3 cup cold milk* (any kind)
  • 2 cups fresh strawberries (sliced in half if large)
  • 1 tbsp all-purpose flour
  • 1 tbsp maple syrup
  • 1/4 cup Nutella or notella
  • 1 egg, beaten
  • Melted dark chocolate, or extra Nutella for drizzling (optional)

Instructions

  1. **Prepare the Dough:** In a large mixing bowl, sift together the all-purpose flour, sugar, salt, and nutmeg. Using a pastry blender or a sturdy fork, cut in the cold, cubed butter until the mixture resembles coarse, pea-sized crumbs. Gradually pour in the cold milk, a little at a time, gently mixing with a spatula until a soft dough begins to form. Be careful not to overmix; overworking the dough can result in a tough crust. Use your hands to quickly gather the dough into a ball, then flatten it into a disc. Wrap the disc tightly in plastic wrap and refrigerate for at least one hour, or up to three days. This chilling period is crucial for a flaky crust.
  2. **Prepare the Filling:** While the dough is chilling, place the fresh strawberries in a small bowl. Add the tablespoon of all-purpose flour and maple syrup, then stir gently to combine. The flour helps to thicken the strawberry juices during baking, preventing a soggy crust. Allow this mixture to sit, covered, in the fridge alongside your dough, for 1-2 hours to allow the flavors to meld.
  3. **Roll Out the Dough:** Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper. On a lightly floured surface, roll out the chilled dough into a 12-inch circle. If you’re feeling festive, you can gently shape it into a heart. Carefully transfer the rolled-out dough to your prepared baking sheet.
  4. **Assemble the Galette:** Arrange the strawberry mixture in the center of the rolled-out dough, making sure to leave most of the excess liquid behind (you can discard it or save it for another use, like stirring into yogurt). Leave a generous 2-3 inch border of dough all around the edges. Warm the Nutella in a microwave-safe bowl for about 30 seconds, or until it becomes more fluid and easy to spread. Pour the warmed Nutella evenly over the strawberries in the center of the dough.
  5. **Form and Bake:** Gently lift the edges of the dough up and over the filling in sections, creating pleats and pressing down lightly to secure them. Don’t worry about perfection; the rustic nature is part of the galette’s charm. If desired, now is a good time to trim and shape the dough a bit to create a more defined heart shape. Once all of the dough edges are lifted and overlapping, brush them all over with the beaten egg and sprinkle lightly with a bit of sugar for a sparkling, golden finish. Place the galette in the preheated oven and bake for 28-33 minutes, or until the crust is a beautiful light golden brown and the filling is bubbly.
  6. **Serve:** Carefully remove the baked galette from the oven. For an extra touch of indulgence, drizzle it immediately with melted dark chocolate or additional warmed Nutella.
