Why These Chocolate Snickerdoodles Will Become Your New Favorite Cookie

When it comes to cookies, everyone loves a good snickerdoodle. But what makes the chocolate version truly stand out? These aren’t just chocolate cookies; they’re snickerdoodles at heart, bringing together the best of both worlds. The addition of cocoa powder creates a deep, rich chocolate flavor that perfectly complements the warmth of the cinnamon-sugar coating. The classic cream of tartar ensures a beautifully chewy texture and that distinctive snickerdoodle tang, making these cookies uniquely flavorful and wonderfully satisfying. They’re surprisingly easy to make, yet impressive enough for any occasion, from casual snacking to elegant dessert platters. Prepare for rave reviews!

The Secret to Snickerdoodle Perfection: Cream of Tartar

The signature chewy texture and slight tang that define a classic snickerdoodle come primarily from one key ingredient: cream of tartar. This acidic salt reacts with baking soda to create a unique leavening process, preventing the cookies from becoming overly cakey and giving them their characteristic soft, pillowy interior with slightly crisp edges. In our chocolate snickerdoodles, cream of tartar plays an equally vital role, ensuring that even with the addition of cocoa, you still get that authentic snickerdoodle mouthfeel that keeps you coming back for more. Don’t be tempted to skip it – it’s crucial for achieving the perfect balance of flavor and texture!

Ingredients for Irresistible Chocolate Snickerdoodles:

Crafting these heavenly chocolate snickerdoodles requires a handful of common baking staples, most of which you likely already have in your pantry. The quality of your ingredients, especially the cocoa powder and butter, can make a significant difference in the final taste and texture. Ensure your butter is at room temperature for optimal creaming, and measure your dry ingredients accurately for consistent results. Here’s what you’ll need to create a batch of these irresistible chocolate cinnamon cookies:

  • 2 1/2 cups all-purpose flour
  • 1/2 cup cocoa powder (unsweetened, natural or Dutch-processed work well)
  • 2 tsp cream of tartar
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened to room temperature
  • 1 cup granulated sugar
  • 1/3 cup brown sugar (packed)
  • 1 large egg
  • 1 egg yolk
  • 1 tsp pure vanilla extract

For the Cinnamon-Sugar Rolling Mixture:

  • 1/4 cup granulated sugar
  • 1 tsp ground cinnamon

Step-by-Step Directions to Bake Chocolate Snickerdoodles:

Follow these detailed steps to create a batch of perfectly soft, chewy, and flavorful chocolate snickerdoodles.

1. In a large mixing bowl, meticulously sift together the all-purpose flour, rich cocoa powder, cream of tartar, baking soda, fragrant cinnamon, and fine salt. Sifting is crucial here as it eliminates any lumps from the cocoa and flour, ensuring a smooth, even cookie dough and a consistent texture in your final baked treats. Once combined, set this dry mixture aside.

2. Using the bowl of a stand mixer equipped with the paddle attachment, or an electric handheld mixer, beat the unsalted butter on high speed for about 1 minute until it becomes light, fluffy, and smooth. This aeration is key for tender cookies. Next, gradually add in the granulated sugar and brown sugar, continuing to mix on high for another minute until the sugars are fully incorporated and the mixture is light and creamy. Remember to periodically scrape down the sides of the bowl with a spatula to ensure all ingredients are evenly mixed.

3. With the mixer now running on a low speed, carefully add the large egg, followed by the egg yolk, and finally the pure vanilla extract. Mix just until these wet ingredients are fully combined. Avoid overmixing at this stage. Subsequently, gradually add the reserved dry ingredients into the wet mixture, mixing only until everything is just combined and no streaks of flour remain. Overmixing can lead to tough cookies, so stop as soon as the dough comes together. Cover the dough and place it in the refrigerator to chill for at least 30 minutes, or up to an hour. This chilling period is vital for preventing the cookies from spreading too much during baking and allows the flavors to deepen. If the dough chills for longer than an hour, allow it to sit at room temperature for about 10 minutes before scooping to make it more pliable.

4. Preheat your oven to 375°F (190°C). While the oven heats, prepare your irresistible cinnamon-sugar coating: in a small, shallow dish, thoroughly combine the ¼ cup of granulated sugar with 1 teaspoon of ground cinnamon. Scoop the chilled dough using a 1.5-tablespoon cookie scoop (or estimate the size of a golf ball) and roll it into a smooth, even ball with your hands. Roll each dough ball generously in the cinnamon-sugar mixture, ensuring it’s completely coated on all sides. Arrange the coated dough balls on a parchment-lined baking sheet, leaving a few inches of space between each to allow for spreading during baking.

5. Bake the cookies for 9-10 minutes. Look for cookies that are very lightly browned on the bottom and have just begun to spread, with slightly puffed centers that will deflate as they cool. Remember, snickerdoodles are best when slightly underbaked, maintaining their soft, chewy texture. They will continue to set and spread a bit more as they cool on the baking sheet. Remove the cookies from the oven and let them cool on the hot pan for 5-10 minutes before carefully transferring them to a wire rack to cool completely. This recipe typically yields around 30 perfectly sized, delectable chocolate snickerdoodles.

Storing Your Delicious Chocolate Snickerdoodles for Maximum Freshness

Once your irresistible chocolate snickerdoodles have completely cooled, proper storage is key to maintaining their delightful texture and flavor. Store them in an airtight container at room temperature for up to one week. While they may still be edible beyond this period, their signature softness and chewiness are best enjoyed within the first few days. For longer-term storage, these cookies freeze beautifully! Simply place the cooled cookies in a single layer on a baking sheet to flash freeze for about 30 minutes, then transfer them to a freezer-safe bag or airtight container. They will stay fresh in the freezer for up to two months. When you’re ready to enjoy them, simply thaw overnight at room temperature or warm them gently in the microwave for a few seconds for that freshly baked feel.

Can You Freeze Chocolate Snickerdoodle Cookie Dough? Absolutely!

Preparing cookie dough in advance is a fantastic way to save time and ensure you always have fresh-baked treats on hand. Luckily, chocolate snickerdoodle dough freezes exceptionally well! You have a couple of convenient options for freezing the dough:

Freezing Individual Cookie Dough Balls:

This method is perfect for baking small batches whenever a craving strikes. After rolling the dough balls in the cinnamon-sugar mixture as per the recipe, arrange them on a parchment-lined baking sheet and flash freeze for 1-2 hours until solid. Once frozen, transfer the solid dough balls to a freezer-safe airtight bag or container. Label with the date and bake-time instructions. They will keep fresh for up to 2 months. When you’re ready to bake, simply place the frozen dough balls on a prepared baking sheet (no need to thaw!) and add an extra 1-2 minutes to the original bake time (so 10-12 minutes total).

Freezing Dough in a Large Batch:

If you prefer to prep a larger quantity of dough, you can freeze the entire batch after the initial chilling step. Wrap the dough tightly in plastic wrap, then place it in a freezer-safe bag or container. This large batch can also be frozen for up to 2 months. When you’re ready to bake, transfer the frozen dough to the refrigerator and thaw overnight. Once thawed, you can proceed with scooping, rolling in cinnamon-sugar, and baking according to the original recipe instructions. Having frozen dough ready means warm, chewy cookies are never far away!

  • 1/2 tsp salt
  • 1 cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 1/3 cup brown sugar
  • 1 egg + 1 egg yolk
  • 1 tsp pure vanilla extract

Sugar Topping

  • 1/4 cup granulated sugar
  • 1 tsp ground cinnamon

Instructions

  1. In a large mixing bowl, sift together the flour, cocoa powder, cream of tartar, baking soda, cinnamon and salt. Set the bowl aside.
  2. In the bowl of a stand mixer fitted with the paddle attachment, or using a handheld electric mixer, beat the butter on high for 1 minute until smooth.
