  • 1/4 cup granulated sugar
  • 1/4 cup packed brown sugar

  • 1/2 tsp pure vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 tsp salt
  • Colorful sprinkles, chopped nuts, or mini chocolate chips for garnish

Instructions

  1. Prepare the Ice Cream: Begin by making your no-churn birthday cake ice cream (or your chosen flavor). Ensure it freezes for a minimum of 6 hours, or preferably overnight, to achieve a firm, scoopable consistency before proceeding to the cookie preparation.
  2. Make the Cookies: Preheat your oven to 350°F (175°C). In the bowl of a stand mixer fitted with the paddle attachment (or using a handheld mixer), beat the softened unsalted butter with both granulated sugar and brown sugar on medium speed for approximately 2 minutes, until the mixture is light and fluffy. Add the egg yolks and vanilla extract, then beat for another minute, scraping down the sides of the bowl to ensure everything is well combined.
  3. In a separate mixing bowl, sift together the all-purpose flour, cocoa powder, and salt. With the mixer running on low speed, gradually add the dry ingredients to the wet ingredients, mixing just until a cohesive dough forms. Do not overmix. Turn the dough out onto a lightly floured piece of parchment paper. Using your hands, gently shape the dough into a log. With a lightly floured rolling pin, roll the dough evenly into a rectangle approximately 3mm (about 1/8 inch) thick. Cut another piece of parchment paper to 7 1/2″ x 8″ and place it precisely over your rolled dough rectangle. Trim any excess dough from around the edges of this top parchment guide. Carefully peel off the top parchment paper. Using a measuring tape or ruler, cut the dough into either 4 large or 6 medium-sized even rectangles, but do not separate them yet. Gather all the dough scraps, gently re-form them into another rectangle of the same thickness, and cut into the same number of rectangles. You should have a total of 8 to 12 cookies. Prick each cookie several times with a fork to prevent excessive puffing during baking.
  4. Carefully transfer the parchment paper with the cookie rectangles onto a baking sheet. Bake for 10-11 minutes, or until the edges are just set and the centers remain slightly soft. Immediately remove from the oven and allow the cookies to cool completely on the baking sheet before handling.
  5. Prepare the Ice Cream Slab: Approximately one hour before assembly, transfer your frozen ice cream from the freezer to the refrigerator to allow it to thaw slightly until it’s spreadable but still very cold. Line a rectangular container or a large baking sheet (ensure it’s at least the size of your cookies) with parchment paper, leaving an overhang for easy removal. Scoop the slightly softened ice cream onto the parchment and use a spatula to spread it evenly to a thickness of about 1 inch. Place another piece of parchment paper on top and gently smooth it out completely to create a uniform slab. Freeze for an additional 30 minutes to 1 hour, until firm.
  6. Assemble the Sandwiches: Remove the firm ice cream slab from the freezer. Lift off the top layer of parchment paper. Carefully invert the ice cream slab onto one half of your cooled cookies. Using a sharp knife, cut through the ice cream to match the shape and size of the cookies underneath. Gently pull the cookie halves apart, placing an ice cream rectangle on one cookie and topping it with another cookie to form a sandwich. Immediately decorate the sides of each sandwich with sprinkles, chopped nuts, or mini chocolate chips while the ice cream is still slightly tacky. Wrap each finished ice cream sandwich individually in parchment paper and freeze for a final 2-3 hours, or until thoroughly firm.
