Celebrating Summer’s Sweetest Stone Fruit: Peaches!

There’s a bittersweet feeling that comes with bidding farewell to summer’s peak, and for many, that sentiment is tied directly to the departure of fresh, perfectly ripe peaches. As summer transitions into fall, we find ourselves cherishing the last moments with these incredible stone fruits. Peaches are undeniably one of the most beloved fruits, and for good reason. Their succulent flesh, delicate aroma, and unparalleled sweetness are simply irreplaceable.

While you can often find berries year-round (though sometimes at a premium and not always at their best), off-season peaches can be a real disappointment. They tend to be mealy, lacking in flavor, and often come with a hefty price tag that doesn’t match their dull taste. This is precisely why we must savor every last, glorious peach while they’re in season.

I’ve been making the most of these late-summer gems, incorporating them into all sorts of dishes. I’ve been grilling them to bring out their smoky sweetness, featuring them in delightful no-bake tarts, and blending them into refreshing smoothies. But among all the wonderful ways to enjoy peaches, baking them into muffins holds a special place in my heart. The heat transforms them into tender, bursts of flavor, and when paired with the vibrant tang of blackberries, the result is pure perfection. And that brings us to these incredible Blackberry Peach Streusel Muffins!

Unlocking the Secret to Bakery-Style Muffins

If you’re anything like me, you have a deep appreciation for those magnificent, jumbo muffins that proudly sit in bakery display cases. And let’s not forget the magic of muffins adorned with a decadent streusel topping – they’re simply irresistible. A truly great bakery-style muffin is more than just a sweet treat; it’s a substantial, satisfying experience. It can serve as a wholesome, filling breakfast to kickstart your day, or a wonderful little midday indulgence, perfectly paired with a steaming cup of coffee or tea.

But what exactly defines a “bakery-style” muffin? Primarily, it’s about size. These muffins are noticeably larger than standard-sized muffins, offering a more generous and indulgent portion. Beyond their impressive stature, they typically boast an extra touch of deliciousness, such as a sprinkle of sparkling sugar for a delicate crunch, or, in this case, a rich, buttery streusel topping that elevates them from good to extraordinary.

These Blackberry Peach Streusel Muffins truly embody the bakery-style ethos. Their incredible moistness and tender crumb are achieved through a thoughtful combination of ingredients: melted butter, which imparts a rich flavor and soft texture, and Greek yogurt, which adds moisture and a subtle tang while keeping them light. Each muffin is generously studded with tender chunks of juicy peach and vibrant, sweet-tart blackberries. The synergy between blackberry and peach is simply undeniable. Blackberries contribute just the right amount of tartness, providing a perfect counterpoint to the inherent sweetness of the peaches, creating a harmonious burst of flavor in every bite.

To achieve this perfect balance of fruit in these muffins, you’ll need approximately one and a half cups of mixed fruit. I found that one cup of chopped peaches and half a cup of blackberries creates an ideal ratio. You can certainly use frozen fruit if fresh isn’t available, but remember to fold the fruit into the batter very gently to prevent breaking it down and to ensure the muffins retain their beautiful marbled appearance.

Crafting the Perfect Streusel Topping: The Muffin Crown

While the moist, fruit-filled muffin base is undeniably delicious, it’s the streusel topping that truly transforms these muffins from great to absolutely amazing! That irresistible buttery, sweet crunch perched atop each muffin is the quintessential element that elevates these giant, fruity delights to bakery-quality status. It adds an essential layer of texture and flavor that makes every bite a memorable experience.

Preparing the streusel is surprisingly simple and requires minimal effort for maximum impact. In a medium-sized bowl, you’ll combine a few pantry staples: large-flake oats (for that rustic texture and nutty flavor), all-purpose flour, rich brown sugar, and delicate slivered almonds. The almonds add a fantastic crunch and subtle nutty note, but you can omit them or substitute with other nuts like pecans if you prefer.

The key to perfect streusel lies in incorporating the butter. Using cold, diced unsalted butter, you’ll work it into the dry ingredients until the mixture resembles coarse crumbs. You can do this with your fingertips, a pastry blender, or even a fork. The goal is to avoid overmixing, keeping distinct pieces of butter distributed throughout the mixture. This ensures that as the muffins bake, the butter slowly melts, creating pockets of golden, crispy goodness that form a glorious, golden-brown crust.

Before baking, generously scatter a heaping amount of this crumbly streusel over the top of each muffin cavity. Don’t be shy – the more streusel, the better! As the muffins bake in the oven, the butter in the streusel will melt, intertwining with the other ingredients to create that heavenly, golden, and crispy topping that we all adore. Seriously, I’m drooling just thinking about it!

Once you’ve adorned your muffins with the delicious streusel, they’re ready for their oven transformation. These jumbo beauties typically require about 22-23 minutes in a preheated oven. If you opt for regular-sized muffins, adjust your baking time accordingly to approximately 15-16 minutes. To check for doneness, simply insert a toothpick into the center of a muffin; if it comes out clean, your muffins are perfectly baked. Remember, every oven can vary slightly, so keeping a close eye on them during the last few minutes is always a good idea.

While your kitchen fills with the intoxicating aroma of warm peaches, blackberries, and buttery streusel, do yourself a favor: brew a fresh pot of your favorite coffee or tea. The anticipation will only heighten the experience, and that first bite of a warm, fresh muffin with a comforting drink will be pure bliss. Trust me, you’ll thank yourself for this simple act of self-care!

Description

These oversized blackberry and peach streusel muffins are a delightful way to capture the flavors of summer! They are incredibly moist and tender, packed with fresh fruit, and topped with a buttery, crunchy streusel for that perfect bakery-style finish. Ideal for breakfast, brunch, or a sweet snack.

Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 2 large eggs, at room temperature
  • 1/3 cup plain Greek yogurt, at room temperature
  • 1/3 cup packed light brown sugar
  • 1/2 cup milk (any kind)*, at room temperature
  • 1/3 cup unsalted butter, melted and slightly cooled
  • 1 tsp pure vanilla extract
  • 1 cup ripe peaches, peeled (optional) and diced into small pieces
  • 1/2 cup fresh blackberries*, gently washed

For the Streusel Topping:

  • 1 cup large-flake rolled oats
  • 1 tbsp all-purpose flour
  • 1/4 cup packed light brown sugar
  • 1 tsp ground cinnamon
  • 2 tbsp slivered almonds
  • 1/4 cup unsalted butter, diced into small, cold pieces

Instructions

  1. Preheat your oven to 375°F (190°C). Prepare a bakery-style (jumbo) muffin tin by greasing it thoroughly or lining it with jumbo paper liners. This will ensure your muffins don’t stick and come out with that perfect shape.
  2. In a large mixing bowl, combine all the dry ingredients: flour, baking powder, baking soda, ground cinnamon, and salt. Use a whisk to thoroughly combine them, ensuring there are no clumps. Set this bowl aside.
  3. In a separate medium-sized bowl, lightly beat the room-temperature eggs. Then, whisk in the Greek yogurt, brown sugar, and milk until well combined. Slowly drizzle in the melted and slightly cooled unsalted butter while continuously whisking to ensure it fully incorporates without scrambling the eggs. Finish by stirring in the pure vanilla extract.
  4. Pour the wet ingredients into the bowl with the dry ingredients. Mix gently with a spatula until just combined. Be careful not to overmix the batter; a few lumps are perfectly fine and will lead to a more tender muffin. Gently fold in the diced peaches and blackberries. Divide the muffin batter evenly among the 6 prepared jumbo muffin cavities, filling each approximately three-quarters full.
  5. Now, prepare your irresistible streusel topping. In a small bowl, combine the large-flake oats, flour, brown sugar, cinnamon, and slivered almonds. Add the cold, diced butter and use your fingertips or a pastry blender to cut it into the dry ingredients until the mixture forms coarse crumbs. Generously sprinkle this streusel mixture over the top of each muffin in the cavities. Bake for 22-23 minutes, or until a wooden skewer or toothpick inserted into the center of a muffin comes out clean.
  6. Once baked, remove the muffins from the oven and let them cool in their muffin pan for about 5 minutes. This allows them to set and makes them easier to remove. After 5 minutes, transfer the muffins to a wire rack to cool completely. Enjoy warm or at room temperature!

These delicious muffins can be stored at room temperature in an airtight container for 3-4 days, keeping them fresh and moist. If you’d like to extend their shelf life, store them in the fridge for up to 1 week. For longer storage, muffins freeze exceptionally well for up to 2 months when kept in an airtight container or a freezer-safe bag. Thaw at room temperature or warm briefly in the microwave for a fresh-baked taste.

Notes

  1. The type of milk you use in this recipe is quite flexible. I used 1% dairy milk, but you can confidently substitute it with full-fat dairy milk, almond milk, or coconut milk, depending on your dietary preferences.
  2. If your fresh blackberries are particularly large, consider slicing them in half before gently folding them into the batter. This ensures a more even distribution of fruit and a balanced flavor in every bite.
