There’s a special kind of satisfaction that comes from whipping up a truly delicious sauce from scratch. And when it comes to teriyaki, that satisfaction is amplified. Forget the overly sweet, often artificial taste of commercial teriyaki; this homemade version offers a perfectly balanced blend of savory, sweet, and tangy notes, with a fresh kick from garlic and ginger.

Teriyaki sauce is an incredibly versatile condiment that can elevate countless dishes. Whether you’re marinating meats, glazing vegetables, or adding depth to a stir-fry, a good teriyaki sauce is indispensable in any kitchen. It’s a staple in our home, especially for preparing succulent salmon, transforming simple ingredients into a meal bursting with authentic Asian-inspired flavors.

If you’ve been relying on bottled teriyaki, now is the time to experience the remarkable difference of homemade. This recipe is not just easy; it’s designed to be foolproof, ensuring you get that restaurant-quality taste right in your own kitchen. Trust us, once you try this, you’ll be hard-pressed to go back to store-bought varieties.

Why Choose Homemade Teriyaki Sauce?

The decision to make your own teriyaki sauce isn’t just about saving a few dollars; it’s about superior flavor, ingredient control, and endless versatility. Store-bought sauces often contain high-fructose corn syrup, artificial colors, and preservatives that can detract from the natural taste of your food. When you make it yourself, you control exactly what goes in, ensuring a healthier and tastier product.

  • Unmatched Freshness: Fresh garlic and ginger are cornerstones of authentic teriyaki. Using them directly results in a brighter, more aromatic sauce compared to powdered or concentrated versions found in commercial products.
  • Customizable Flavor Profile: Crave a little more sweetness? A touch more spice? With homemade teriyaki, you can adjust the balance of flavors to suit your personal preference, something impossible with pre-bottled options.
  • No Unnecessary Additives: Say goodbye to artificial flavors, colors, and thickeners. This recipe uses simple, wholesome ingredients you can trust.
  • Economical: You likely already have most of the ingredients in your pantry, making this a budget-friendly option compared to specialty store-bought sauces.
  • Versatility Beyond Measure: From marinades to glazes, dipping sauces to stir-fry bases, a good homemade teriyaki sauce is a culinary chameleon.

How to Make the Perfect Homemade Teriyaki Sauce

Creating this delicious teriyaki sauce is surprisingly straightforward, proving that the best flavors often come from the simplest methods. The magic lies in a handful of real ingredients, many of which are likely already gracing your pantry shelves:

  • Soy Sauce: The backbone of any teriyaki, providing that essential umami and salty depth. For a gluten-free option, easily substitute with tamari.
  • Honey: Our preferred natural sweetener, offering a subtle floral note that complements the savory elements beautifully.
  • Fresh Garlic Cloves: Minced finely, fresh garlic delivers a pungent, aromatic kick that’s irreplaceable.
  • Fresh Ginger: Shredded fresh ginger adds a warm, zesty, and slightly spicy aroma.
  • Cornstarch: The secret to achieving that perfect, glossy thickness that clings wonderfully to food.
  • Water: Used to create the cornstarch slurry and to adjust the sauce’s consistency.

While many traditional teriyaki recipes call for brown sugar, we often opt for honey to keep our savory dishes refined sugar-free for the family. The right amount of honey achieves a perfectly balanced sweetness without being overpowering. However, if you prefer the rich, molasses notes of brown sugar, feel free to experiment! You can swap a portion of the honey for brown sugar, perhaps 2 tablespoons of brown sugar and 2 tablespoons of honey, to find your ideal sweet spot. Both variations are undeniably delicious.

The process itself is wonderfully simple. Begin by combining all ingredients, except the cornstarch and its accompanying water, in a small saucepan. Heat this mixture over medium-high heat, whisking occasionally, until it just begins to bubble gently. This simmering stage allows the flavors to meld and intensify, releasing the full aroma of the garlic and ginger.

Next, prepare the cornstarch slurry. This crucial step ensures a smooth, lump-free sauce. In a separate small bowl, whisk together the cornstarch with the remaining ¼ cup of water until thoroughly combined. Make sure there are no lumps, as these will translate directly into your sauce. Once your main sauce mixture is simmering, slowly whisk in the cornstarch slurry. You’ll notice almost immediately that the sauce begins to thicken and bubble more vigorously. Continue whisking gently until it reaches your desired consistency – whether you prefer it slightly thinner for a marinade or wonderfully thick for a glaze.

Once the teriyaki sauce reaches your preferred thickness, remove it from the heat. At this point, you have the option to add a pinch of red pepper flakes for a delightful touch of heat, transforming it into a spicy teriyaki. This is entirely optional but highly recommended if you enjoy a little zing!

The sauce can be used immediately, hot off the stove, to coat chicken, salmon, or stir-fried vegetables. Alternatively, allow it to cool completely before transferring it to an airtight container for later use. It truly is that easy to have a flavorful, homemade teriyaki sauce ready whenever the craving strikes.

Tips for the Best Homemade Teriyaki Sauce

Achieving a restaurant-quality teriyaki sauce at home is simple with a few helpful tips:

  • Use Fresh Ingredients: While convenience often leads us to powdered garlic and ginger, using fresh versions makes a world of difference in the sauce’s vibrancy and aroma. Invest in fresh ginger root and garlic cloves for the most authentic flavor.
  • Adjust Sweetness to Taste: The amount of honey (or brown sugar) can be adjusted based on your preference. Start with the recommended amount, then taste and add more in small increments if you prefer a sweeter sauce.
  • Proper Cornstarch Slurry: Always mix cornstarch with cold water first to form a smooth slurry. Adding cornstarch directly to hot liquid will result in lumps. Whisk the slurry well before adding it to the simmering sauce.
  • Constant Whisking: When adding the cornstarch slurry, whisk continuously to ensure even thickening and prevent any burning at the bottom of the pot.
  • Taste and Adjust: Before removing the sauce from heat, give it a taste. This is your chance to adjust seasoning – a tiny splash of rice vinegar can add more tang, or a pinch of salt if using low-sodium soy sauce.
  • Consider Sesame Oil: For an extra layer of nutty, aromatic flavor, you can whisk in a teaspoon of toasted sesame oil right after removing the sauce from the heat.

What Can You Use This Easy Homemade Teriyaki Sauce For?

The possibilities are virtually endless when it comes to incorporating this delightful teriyaki sauce into your culinary creations. Its balanced flavor profile makes it a fantastic addition to a wide array of dishes:

  • Marinade Marvel: It’s an exceptional marinade for chicken, beef, pork, and even firm tofu. Let your proteins soak up the rich flavors for at least 30 minutes, or ideally several hours, before grilling, baking, or pan-frying.
  • Stir-Fry Sensation: Whisk it into your favorite vegetable or protein stir-fries. It coats everything beautifully, creating a glossy, flavorful finish. Think chicken and broccoli stir-fry, beef and bell pepper, or a vibrant tofu and snap pea medley.
  • Glaze Extraordinaire: Brush it onto grilled or baked meats as a sweet and savory glaze. It works wonders on chicken wings, pork chops, or our salmon bites, giving them a sticky, caramelized coating.
  • Dipping Delight: Serve it as a dipping sauce for appetizers like chicken tenders, spring rolls, gyoza, or even simple vegetable sticks.
  • Sheet Pan Hero: Drizzle over your preferred proteins and vegetables for an easy, flavorful sheet pan meal. The sauce helps everything roast perfectly, creating tender, caramelized goodness.
  • Noodle & Rice Bowls: Use it to dress up simple rice bowls with grilled chicken or crispy tofu, or toss it with stir-fried noodles for a quick and satisfying meal.

From a quick weeknight teriyaki chicken with fluffy rice to an impressive steak or shrimp stir-fry, this sauce is your go-to for adding an irresistible Asian twist to any dish.

How Long Does This Teriyaki Sauce Last in the Fridge, and Can You Freeze It?

One of the best aspects of making your own teriyaki sauce is its excellent shelf life. Once prepared and cooled, I typically store my homemade teriyaki in an airtight mason jar or a similar sealed container in the refrigerator. Properly stored, it will last for up to 10 days, allowing you to enjoy its fresh flavors throughout the week.

It’s important to note that as the teriyaki sauce cools down in the fridge, it will naturally thicken significantly, sometimes becoming quite gel-like or clumpy due to the cornstarch. This is completely normal and no cause for concern! To restore it to its perfectly pourable and usable consistency, simply give it a good stir. If you need it for a warm dish or prefer a thinner consistency, you can gently warm it on the stovetop over low heat or in the microwave for a few seconds. A little whisking will bring it right back to life.

For even longer storage, this homemade teriyaki sauce is freezer-friendly! Pour the cooled sauce into freezer-safe containers or ice cube trays for individual portions. It can be frozen for up to 2-3 months. When you’re ready to use it, simply thaw it in the refrigerator overnight and then reheat gently on the stovetop, whisking to restore its smooth texture. This makes meal prep a breeze and ensures you always have a supply of delicious teriyaki on hand.

However you choose to use and store this incredible homemade teriyaki sauce, we’re confident you’ll absolutely love the vibrant, fresh flavors it brings to your table!

Description

This easy homemade teriyaki sauce is made with simple ingredients and tastes so much better than store-bought! You’ll always want to have it on hand!

Ingredients

Scale
  • 1/3 cup soy sauce
  • 1/4 cup honey
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, shredded
  • 1 cup + 1/4 cup water, divided
  • 2 tbsp cornstarch
  • pinch of red pepper flakes (optional)

Instructions

  1. In a small pot, whisk together the soy sauce, honey, minced garlic, shredded ginger, and 1 cup of the water. Place the pot on the stove over medium-high heat and allow the mixture to come to a light simmer, whisking occasionally.
  2. In a separate small bowl, whisk together the remaining 1/4 cup water with the cornstarch until completely smooth. Add this cornstarch mixture to the simmering pot, whisking vigorously. Continue to whisk as the sauce thickens and begins to bubble. Once it reaches your desired thickness, remove it from heat. Use immediately, or allow it to cool down completely before bottling for storage.

Store the cooled teriyaki sauce in the fridge, in an airtight jar or container, for up to 10 days.

Notes

The sauce will become thick and gel-like when stored in the fridge. Simply give it a good stir and gently reheat (on the stove or in the microwave) to restore its smooth, pourable consistency for easy use!
