  • 1 1/2 cups super-fine almond flour
  • 1/2 cup medium shredded coconut, unsweetened
  • 1/4 cup cocoa powder
  • 1/4 cup coconut oil, melted
  • 3 tbsp honey*
  • 1/4 tsp salt

Chocolate Coconut Filling

  • 8 oz dark chocolate, chopped*
  • 1 1/2 cups full-fat coconut milk
  • 1 1/4 cup medium shredded coconut, unsweetened, divided
  • 1 tsp pure vanilla extract
  • mini eggs, for garnish

Instructions

  1. Preheat the oven to 350 F (175 C) and lightly grease a 9″ tart pan with a removable bottom. You can use coconut oil, non-stick spray, or butter. In a medium-sized bowl, whisk together the almond flour, shredded coconut, and cocoa powder until well combined. Add the melted coconut oil, honey, and salt, then stir with a large spoon until the mixture is thoroughly moistened and forms a cohesive dough. Empty the mixture into the bottom of the tart pan, pressing it firmly and evenly into the base and about 1/2″ up the sides to form the crust. Bake the crust for 10 minutes until lightly golden and set. Remove the tart from the oven and let it cool completely on a wire rack while you prepare the delicious filling.
  2. To make the chocolate coconut filling, place the chopped dark chocolate in a heat-proof bowl. In a medium saucepan, heat the full-fat coconut milk over medium-high heat until it comes to a gentle simmer (do not boil). Carefully pour the hot coconut milk over the chopped chocolate and allow it to sit undisturbed for 1-2 minutes, giving the chocolate time to melt. Then, stir vigorously with a whisk or spoon until the chocolate is completely melted and smoothly combined with the milk, forming a thin, glossy ganache. If using unsweetened chocolate, now is the time to add your preferred sweetener. Stir in 1/2 cup of the shredded coconut and the pure vanilla extract. Pour the prepared filling into the cooled tart crust, spreading it evenly. Carefully transfer the tart to the refrigerator and chill for at least 2 hours, or until the filling is completely firm and set.

For smaller portions, empty 2 tablespoons of coconut into a third bag with 1 drop of pink food coloring, and another 2 tablespoons into a final bag with 1 drop of green coloring. Seal each bag and shake until the coconut is evenly colored. Arrange the colored coconut in concentric rings or patterns on top of the chilled tart. For the center, use plain white coconut or top with festive chocolate mini eggs for an extra Easter touch!
  4. Once fully chilled and decorated, remove the tart from the pan, slice it into wedges, and serve.
