Experience the ultimate breakfast delight with these incredible Rhubarb Streusel Rolls! Combining a simple yet rich streusel with a vibrant, healthy rhubarb compote, this recipe creates an unforgettable morning treat. Prepare them the night before for an effortless, gourmet start to your day.

Are you ready to embrace the enchanting flavor of rhubarb? These Rhubarb Streusel Rolls were born from a deep appreciation for this often-underestimated ingredient. My love for rhubarb is easily sustained by a magnificent, self-sufficient plant thriving right outside my back door. Requiring virtually zero maintenance, it consistently returns year after year, offering an abundant harvest that never fails to inspire new culinary creations.
Rhubarb truly is the queen of spring and early summer produce. Initially, it presents a bold, tart, and somewhat sassy demeanor, even possessing poisonous leaves. However, with a little care and gentle cooking, it transforms into the most delightfully sweet and tender ingredient, ready to grace a multitude of dishes. Its unique tang perfectly balances sweetness, making it a versatile star in both savory and sweet applications.
A Crucial Safety Reminder: Rhubarb leaves are poisonous and should never be consumed! Only the stalks are edible.
You’ll find rhubarb making appearances in a diverse array of recipes, from comforting savory meals to decadent desserts and vibrant breakfast fare. While I’ve been experimenting with rhubarb in various savory contexts, those creations aren’t quite ready for sharing just yet. For now, my site features a few other beloved rhubarb recipes, including my highly acclaimed Double Streusel Strawberry Rhubarb Muffins. I confess, I’ve struggled to re-photograph that recipe because the muffins disappear too quickly – a testament to their irresistible appeal!
So, these delightful rolls emerged from a simple desire to explore new horizons with rhubarb, venturing beyond the realm of muffins to create something equally comforting yet distinct.

Cinnamon rolls hold a special place as one of our most cherished decadent breakfasts. While the boys in my family typically gravitate towards versions generously slathered with fluffy cream cheese icing, they offered no complaints when presented with these beautiful, ruby-hued rolls. Each roll is generously stuffed with a luscious, saucy rhubarb compote and topped with a wholesome streusel filling, offering a delightful and refreshing twist on the usual breakfast pastry.
What makes these Rhubarb Streusel Rolls even more appealing is that they are entirely refined sugar-free! The only exception is the simple glaze, as finding a truly comparable substitute for powdered sugar remains a challenge. To sweeten the dough and the vibrant compote, I opted for natural honey, while the streusel boasts the rich, caramel notes of coconut sugar. This mindful approach to ingredients allows us to confidently call this a genuinely healthy rhubarb recipe – a guilt-free indulgence that doesn’t compromise on flavor or satisfaction.
Let’s address some common questions about rhubarb and this fantastic recipe:
Is Eating Rhubarb Good for You? Unpacking Rhubarb’s Nutritional Benefits
Though often treated as a fruit in culinary applications, rhubarb is botanically a vegetable. Don’t let its sweet companion status fool you; rhubarb offers several notable health benefits. While it might not be a powerhouse of every single nutrient, it is an excellent source of vitamin K, which plays a crucial role in blood clotting and bone health. Additionally, rhubarb provides a fair amount of vitamin C, an essential antioxidant that supports immune function and skin health. Beyond vitamins, it’s also a fantastic source of dietary fiber, aiding in digestion and promoting a healthy gut. So yes, incorporating rhubarb into your diet, especially in a balanced recipe like these rolls, can be a beneficial choice for your overall well-being.
Can You Make Rhubarb Compote Using Frozen Rhubarb? Tips for Using Both Fresh and Frozen
Absolutely! Whether you have a fresh harvest or a stash from your freezer, you can successfully make the luscious rhubarb compote for these rolls. Using frozen rhubarb is incredibly convenient and allows you to enjoy its delightful flavor year-round. When working with frozen rhubarb, you might notice a slightly higher moisture content compared to fresh stalks. To achieve the perfect consistency for your compote, simply plan to add a touch more cornstarch – perhaps an additional teaspoon – to help it thicken beautifully. So, if you’re lucky enough to have your own rhubarb plant, don’t hesitate to chop and freeze those extra stalks. It’s an ideal way to stockpile this seasonal gem and enjoy it throughout the colder months, making these rolls a possibility even when fresh rhubarb isn’t in season!
How Long Does It Take to Make Rhubarb Streusel Rolls? Planning for Perfection
Creating these delightful Rhubarb Streusel Rolls does require a bit of dedication and time, primarily because the yeast dough needs two separate rising periods. From start to finish, the entire process, including prep and baking, takes approximately 3 hours. However, the active hands-on time is much less, and the rising periods are mostly passive. For ultimate convenience, especially if you plan to serve these for breakfast, I highly recommend starting the recipe the evening before. This allows the second rise to happen slowly overnight in the refrigerator, meaning you can simply pop them in the oven in the morning for a freshly baked treat. If you’re new to working with yeast, don’t be intimidated! It’s a surprisingly straightforward process, and with a little patience, you’ll master it. Trust me, the soft, fluffy results are well worth the effort!

After a mere 25 to 30 minutes in the oven, these rolls emerge gloriously soft, incredibly fluffy, and infused with a warm, gooey, and irresistibly sweet streusel-filled center. The aroma alone is enough to make your mouth water! To crown this masterpiece, a simple yet elegant glaze is drizzled generously over each roll, crafted from a bit of the leftover rhubarb compote and a touch of powdered sugar. The result is pure bliss – a harmonious blend of textures and flavors that will undoubtedly earn these rolls a permanent spot in your breakfast rotation. Yummers!

Ingredients
Scale
Rolls
- 1/3 cup unsalted butter, cubed
- 1 cup whole milk**
- 1 packet active dry yeast (2 1/2 tsp)
- 1 egg, whisked
- 2 tbsp honey (sub maple or agave syrup)
- 1/2 tsp salt
- 3 1/2 cups all-purpose flour***
Rhubarb Compote
- 3 cups chopped rhubarb (fresh or frozen)*
- 1/2 cup honey (sub maple or agave syrup)
- 2 tsp fresh lemon juice
- 1 tbsp cornstarch
Streusel
- 2 tbsp butter, cubed
- 1/2 cup rolled oats
- 1/2 cup coconut sugar, packed (sub brown sugar)
- 2 tbsp all-purpose flour
Rhubarb Glaze
- 1/4 cup reserved rhubarb compote
- 1/2 cup powdered sugar
- squeeze of fresh lemon (about 2 tsp)
- 1 tbsp whole milk
Instructions
- Prepare the Dough. In a medium saucepan over medium-high heat, gently melt the butter. Once fully melted, slowly pour in the whole milk and stir continuously until well combined. Heat the mixture until it is warm to the touch (about 105-115°F or 40-46°C) but not scalding. Remove the saucepan from the heat.
- Transfer the warm butter and milk mixture into the bowl of a stand mixer fitted with the dough hook attachment (or a large mixing bowl for hand kneading). Sprinkle the active dry yeast evenly over the surface of the liquid and stir gently to combine. Let this mixture rest for 5 minutes, or until you observe a foamy layer forming on top, indicating that the yeast is active and proofing. Next, add the whisked egg, honey (or chosen syrup), salt, and all-purpose flour to the bowl. If using a stand mixer, turn it on low speed until all ingredients are just combined and a soft dough ball begins to form. Then, increase the speed to medium-high and continue to knead for another 5-6 minutes until the dough is smooth and elastic. If kneading by hand, stir the mixture with a large wooden spoon until it forms a shaggy dough, then turn it out onto a lightly floured surface and knead for 4-5 minutes until smooth. Transfer the dough to a large, lightly oiled bowl, cover it with plastic wrap or a clean kitchen towel, and allow it to rise in a warm environment for 1 1/2 – 2 hours, or until it has visibly doubled in size.
- Prepare the Rhubarb Compote. While the dough is rising, prepare the flavorful rhubarb compote. In a medium-sized saucepan set over medium heat, combine the chopped rhubarb (fresh or frozen), honey, fresh lemon juice, and cornstarch. Stir all ingredients together thoroughly. Bring the mixture to a gentle boil, stirring occasionally to prevent sticking. Once boiling, reduce the heat to low and allow the compote to simmer for approximately 10 minutes, or until it has thickened to your desired consistency. Use the back of your spoon or a potato masher to gently break up any larger pieces of rhubarb for a smoother texture. Remove the compote from the heat and transfer it to a separate bowl. Place the bowl in the refrigerator to cool completely, which will take about 1 hour, ensuring it is chilled before use.
- Prepare the Streusel Topping. In a medium-sized mixing bowl, combine the cubed butter, rolled oats, packed coconut sugar, and all-purpose flour. Add a pinch of cinnamon for extra warmth and flavor. Using a pastry cutter, your fingertips, or a fork, work the ingredients together until the mixture resembles coarse crumbs, similar to small peas. Set the streusel aside until you are ready to assemble the rolls.
- Once the dough has completed its first rise and doubled in size, gently punch it down to release the air. Lightly dust a clean work surface with flour and turn the dough out onto it. Using a floured rolling pin, roll the dough into a large rectangle, approximately 12×18 inches (a measuring tape can be helpful here for precision!). Retrieve the chilled rhubarb compote from the refrigerator. Spread the compote evenly across the rolled-out dough, making sure to leave about a 1-inch border clear on all sides. Evenly scatter the prepared streusel mixture over the compote-covered dough. Carefully and tightly roll up the dough from the long edge (the 18-inch side) to form an 18-inch log. Some filling may spill out; this is perfectly normal. Using a sharp knife or dental floss, cut the log into 12 equal pieces. Arrange the cut pieces, spiral side up, into a lightly greased cast iron skillet or a 9×13-inch baking pan. Cover the pan tightly with plastic wrap or aluminum foil. Place the covered pan in a warm spot for a second rise, allowing 1-2 hours for the rolls to become noticeably puffy (or place in the refrigerator overnight for an easy morning bake – see notes for overnight method).
- Prepare the Glaze. In a small mixing bowl, combine the reserved 1/4 cup of rhubarb compote (from step 3), powdered sugar, and a small squeeze of fresh lemon juice (about 2 teaspoons). Whisk these ingredients together until smooth. Then, gradually add 1 tablespoon of whole milk, whisking until the glaze reaches a pourable consistency. If you prefer a thicker glaze, add a bit more powdered sugar; for a thinner glaze, add a touch more milk, a teaspoon at a time, until desired consistency is achieved.
- Preheat your oven to 350°F (175°C). Once the rolls have completed their second rise and are beautifully puffy, remove the plastic wrap or aluminum foil from the pan. Carefully place the pan into the preheated oven and bake for 25-30 minutes, or until the tops are lightly golden brown and the rolls are cooked through. After about 15 minutes of baking, check the rolls; if the tops are browning too quickly, loosely cover the pan with aluminum foil for the remainder of the cooking time to prevent over-browning.
- Remove the baked rolls from the oven. While they are still warm, generously smother them with the prepared rhubarb glaze. Serve immediately to enjoy their incredible warmth and fresh flavor!
Leftover rolls can be stored in an airtight container in the refrigerator for 3-4 days. Gently warm them before serving for the best experience.
Notes
*If using frozen rhubarb, you might find it releases more moisture during cooking. To ensure your compote thickens properly, you may need to add about 1 teaspoon more cornstarch than specified in the recipe.
**For the richest and softest dough, I highly recommend using whole milk. You could also use 2% milk, but I would not advise using anything lighter, as the fat content contributes significantly to the dough’s texture and flavor.
***When kneading the dough, it should eventually pull away cleanly from the sides of the mixing bowl. If your dough remains too sticky, add a touch more all-purpose flour, one tablespoon at a time, until it reaches the correct consistency.
****Overnight Option: To prepare these rolls ahead of time for an easy morning treat, complete up to step 5. After placing the cut rolls into the greased pan, cover them tightly with plastic wrap or aluminum foil and place them directly into the refrigerator overnight. In the morning, remove the rolls from the fridge and let them sit at room temperature for approximately 1-2 hours in a warm spot to complete their second rise before proceeding with step 6 (preheating the oven) and baking.
