It feels as though I just penned that post yesterday, reflecting on his life and the joy he brought. Time, indeed, possesses an incredible, often bewildering, speed. Just yesterday marked my Dad’s birthday; he would have been 64. I often find myself imagining what he would have been like at that age, cherishing the thought of new memories we could have made.
In these extraordinary times, when the world seems to have paused under the weight of a global pandemic, my thoughts frequently drift to him. I wonder what his perspective would have been on everything unfolding around us. The world certainly feels like it’s in a precarious state right now, and the gravity of current events is undeniable. I am immensely grateful that my family remains healthy, and we are fortunate to have all our essential needs met. Despite the challenges, I am committed to maintaining a positive outlook, though I must confess, the prolonged days of social isolation can be profoundly tough on the spirit.
Yet, amidst it all, there’s always comfort to be found in simple pleasures. And what could be more comforting, more celebratory, than baking? With many of us having stocked our pantries with baking essentials like flour, there’s no better time to turn on the oven and whip up something special. Whole wheat flour also lends a wonderfully rustic texture and a deeper, nuttier flavor profile, making the cake more satisfying and nutritious.
- Zero Refined Sugars: One of the biggest offenders in traditional cakes is refined sugar. This recipe entirely sidesteps white sugar, opting instead for pure maple syrup. Maple syrup, while still a sweetener, offers a lower glycemic index compared to granulated sugar and contains beneficial antioxidants. It provides a natural sweetness that complements the other ingredients beautifully, without the sugar crash.

The cakes need to bake for approximately 25-28 minutes at 350°F (175°C). It’s crucial not to overbake this particular cake, as whole wheat flour can be prone to drying out if left in the oven for too long. Begin checking for doneness around the 25-minute mark by inserting a toothpick into the center of the cake; if it comes out clean, the cake is ready. If it comes out with wet batter, bake for another 1-2 minutes and re-check.
For cakes with perfectly level tops, you can use moistened cake strips wrapped around your pans during baking. These strips help the cakes bake more evenly, preventing doming. If you don’t have cake strips, don’t worry! I simply allowed my cakes to cool completely and then used a serrated knife to carefully level off the tops before frosting. This ensures a neat, professional-looking finish for your layered cake.
The Frosting Dilemma: Healthy or Indulgent?
When it came to the frosting for this cake, I initially aimed for something entirely free of refined sugars, just like the cake itself. I experimented with a few different formulations, but ultimately, the one I’ve included here emerged as my absolute favorite. This frosting strikes a wonderful balance: it’s made with a blend of melted white chocolate and cream cheese, offering a texture remarkably similar to classic buttercream – thick, creamy, and wonderfully sweet, but never cloyingly so. Alternatively, if you’re not strictly adhering to a no-sugar rule and simply want a delicious, familiar frosting, you could prepare a straightforward cream cheese frosting or a classic buttercream. But here’s the wonderful thing about a healthier cake: you can totally justify polishing off any leftovers for breakfast! It’s wholesome enough to start your day with a little celebratory sweetness.
To keep your cake fresh and moist for as long as possible, store it in an airtight container at room temperature on the counter. It will remain delightful for 3-4 days. For longer storage, you can refrigerate it, but be aware that the frosting might firm up a bit. Bring it back to room temperature before serving for the best flavor and texture.

Happy Birthday! This whole wheat healthy birthday cake is a low sugar birthday cake that still has all of the sprinkles and fun with fewer naughty ingredients!
Ingredients
- 1 cup whole wheat flour
- 1 1/4 cup all-purpose flour*
- 1 1/2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/3 cup coconut oil, melted and slightly cooled
- 1/4 cup unsweetened applesauce
- 2 large eggs
- 2/3 cup pure maple syrup
- 1 tbsp pure vanilla extract (yes, tbsp)
- 1 1/2 cups buttermilk**
- 1/3 cup sprinkles, plus more for decorating
Frosting***
- 1 package (8oz) full-fat cream cheese
- 1/2 cup plain, full-fat Greek yogurt (at least 2.5%)
- 4 oz white chocolate, chopped
Instructions
- Preheat the oven to 350 F (175 C) and spray two 6″ round cake pans**** with non-stick cooking spray, and lightly flour them. Set them aside.
- In a large mixing bowl, sift together the flours, baking powder, baking soda and salt. In another bowl, whisk together the coconut oil with the applesauce, followed by the eggs. Add the maple syrup, and vanilla extract. Add half the dry ingredients to the wet, and stir to combine. Add half the buttermilk, stir to combine, then add the remaining dry, followed by the wet, until there are no dry streaks left in the batter.
- Divide the batter evenly between the two pans (use a kitchen scale to be exact), then bake the cakes for 25-27 minutes. Check the cakes with a toothpick at 25 minutes; if the toothpick comes out wet, bake for an additional 2 minutes before checking again. If it’s clean, remove the pans from the oven. Let them cool for 10 minutes before carefully inverting the cakes onto a wire rack to cool completely.
- Prepare the frosting. In the bowl of a stand mixer fitted with the paddle attachment, or using a handheld electric mixer, combine together the cream cheese with the Greek yogurt until smooth and whipped. Melt the white chocolate, using a microwave-safe bowl, in 30 second increments, until smooth. Add the melted chocolate to the mixer and beat to combine. Frost the cakes immediately, using a spatula to smooth onto the cake.
Serve the cake immediately, or the next day. The cake will keep, in an airtight container, on the counter for 3-4 days.

*If you have access to white whole wheat flour, you can use this in place of the entire amount of flour (2 1/4 cups flour)
**I highly recommend using the store-bought buttermilk, full-fat. In a pinch, you can make your own by adding 1 1/2 tbsp lemon juice to plain milk, and letting it sit for 10 minutes.
