Instructions
- Prepare the Crepe Batter: In a large mixing bowl, whisk the eggs vigorously for about a minute until they become slightly frothy. Add the milk and both vanilla and almond extracts, then whisk again until all ingredients are thoroughly combined. Gradually, a little at a time, incorporate the tapioca flour, stirring with a large spoon or whisk until fully combined and no large lumps are visible. For best results, refrigerate the batter for approximately 30 minutes*. This resting period helps improve the crepe’s texture and makes them easier to handle.
- Cook the Crepes: Heat an 8-inch to 9-inch non-stick skillet over medium heat on your stove. Working quickly, pour about 1/4 cup of batter into the center of the skillet.
