There’s something truly magical about the aroma of freshly baked goods wafting through your home, especially on a dreary morning. A few days ago, as the skies unleashed buckets of snow, transforming the world outside into a monochrome landscape, I decided it was time to inject some much-needed color and sweetness into our lives. And what better way to do that than with a batch of homemade donuts? Not just any donuts, mind you, but these incredible baked strawberry buttermilk donuts.
You might be thinking, “Homemade donuts? Isn’t that a huge undertaking?” While the idea of making donuts often conjures images of bubbling oil and messy deep-frying, I’m here to tell you that these baked wonders require no deep fryer at all. They are every bit as delicious, tender, and satisfying as their fried counterparts, but without the hassle and extra grease. It’s a game-changer for anyone who loves the taste of donuts but prefers a simpler, lighter approach.
The moment my son, Oscar, spotted the shiny, pink-glazed beauties sitting on the kitchen counter after his gymnastics class, his eyes lit up. Holding up all ten fingers, he eagerly declared he wanted “3 donuts!!” His excitement was palpable, and thankfully, these donuts more than delivered on their promise of pure delight. They were the perfect mid-morning treat for my little family (Wally, our furry friend, was understandably excluded from this particular indulgence).
Why Fresh Strawberries are the Star of These Baked Donuts
Lately, I’ve found myself buying strawberries in what can only be described as mass quantities. There are a few compelling reasons behind this delightful obsession:
- **Seasonal Abundance and Value:** Strawberries always seem to be on sale, especially during peak season. Who can resist a good deal on such a flavorful fruit?
- **Baby’s Favorite:** They currently make up a significant portion of my 8-month-old’s diet. It’s a joy to watch him enjoy the sweet, juicy goodness of fresh berries.
- **Recipe Inspiration:** Most importantly, I’ve been yearning to incorporate strawberries into a donut recipe for ages. However, my previous attempts were often thwarted because we’d devour all the strawberries before I even had a chance to bake with them! This time, I made sure to stash a special batch just for these donuts.
The natural sweetness and slight tartness of fresh strawberries are simply unmatched. When baked into a donut, they soften beautifully, releasing their vibrant juices and infusing every bite with an irresistible fruity essence. Plus, their gorgeous red hue adds a pop of natural color that’s incredibly appealing, both in the donut batter and especially in the luscious glaze.

The Joy of Baked Donuts: A Healthier, Easier Alternative
My journey into the wonderful world of homemade baked donuts began a couple of years ago when I stumbled upon a simple Wilton Nonstick 6-Cavity Donut Pan. This single purchase transformed my baking routine and opened up a whole new realm of possibilities. Suddenly, I found myself regularly competing with local donut shops – a true testament to my Canadian roots and love for a good donut! There’s an undeniable excitement that surrounds donuts. Although their ingredients are quite similar to muffins, donuts always feel extra special. I’m convinced it’s the magical allure of the sweet, often colorful, icing that truly elevates them.
Opting for baked donuts over traditional fried ones comes with several fantastic benefits. Firstly, there’s significantly less mess. No hot oil splattering, no tricky temperature management, and much easier cleanup. Secondly, they’re generally a healthier option, as they absorb far less fat than deep-fried varieties. This means you can indulge in these delightful treats with a little less guilt. And finally, baked donuts tend to be incredibly moist and cake-like in texture, offering a comforting chew that’s distinct from the crispier exterior of a fried donut.
Crafting the Perfect Baked Strawberry Donut
The secret to wonderfully moist, fluffy, and tender baked donuts lies in one key ingredient: buttermilk. I consistently reach for buttermilk in my donut recipes because it contributes an incredible richness, helps activate the leavening agents for that perfect puffy texture, and adds a subtle tang that beautifully balances the sweetness of the strawberries. This slight tartness is crucial, allowing the fresh fruit flavor to truly shine without the donut becoming overly sweet.
Speaking of sweetness, the natural sugars from the strawberries mean you won’t need a massive amount of added sugar in the batter. For this recipe, I’ve used just 1/2 cup of coconut palm sugar, which provides a lovely, mild caramel note. However, if you prefer, granulated white sugar works perfectly fine as a substitute, yielding a similarly delicious result.
Once your batter is prepared and ready to go, the easiest way to fill your donut pan is by using a piping bag. This simple trick makes the process incredibly neat and efficient, ensuring each donut cavity is evenly filled without any drips or spills. If you don’t have a piping bag, a large resealable plastic bag with a corner snipped off will do the trick just as well.

Whipping Up the Luscious Strawberry Glaze
What’s a donut without its icing? For these baked strawberry donuts, we’re making an incredibly simple yet utterly delicious strawberry glaze. This vibrant, smooth glaze requires only two core ingredients: fresh strawberries and powdered sugar. The magic happens when you puree the strawberries – I typically use an immersion blender for its convenience, but a regular blender or food processor will achieve the same silky-smooth consistency. This pureed strawberry base gives the glaze a beautiful natural pink color and an intense, authentic fruit flavor.
A crucial tip for the glaze: prepare it while your donuts are baking or just as they come out of the oven. Avoid making it too far in advance, as it tends to thicken and set in the bowl, making it much more challenging to achieve that perfect, even coating when you dip your donuts. You want it fluid enough to easily coat each donut, but thick enough to cling beautifully and set into a delightful sugary shell.

Once your donuts emerge from the oven – a quick 7-9 minutes of baking time, depending on your oven (mine are usually ready in 7) – allow them to cool on a wire rack for about 10 minutes. This initial cooling period is important because dipping hot donuts into the glaze can cause it to melt right off. After they’ve cooled slightly, it’s time for the fun part: dunking each donut, one by one, into that glorious strawberry glaze. For an extra touch of festivity and crunch, feel free to top them with your favorite sprinkles immediately after dipping. Then, let the glazed donuts set for another 10 minutes or so on the wire rack, allowing the icing to firm up slightly before you dig in.

While donuts are truly best enjoyed fresh out of the oven, still slightly warm with the glaze glistening, they will absolutely still taste fantastic the next day. Just be sure to store them in an airtight container at room temperature to maintain their moistness. If you want the glaze to stay perfectly intact, consider storing them in the refrigerator, but allow them to come to room temperature before serving for the best texture.

These baked strawberry buttermilk donuts are a delightful way to bring a little extra sweetness and cheer into your day. They’re surprisingly easy to make, offer a healthier alternative to fried donuts, and are utterly irresistible with their fresh strawberry flavor and beautiful pink glaze. Give them a try – I promise you won’t be disappointed!

Description
You will LOVE these baked strawberry donuts made with buttermilk and fresh strawberries. The strawberry glaze icing recipe is so easy and the perfect topping to strawberry donuts!
Ingredients
Donuts
- 2 cups all-purpose flour
- 1/2 cup coconut palm sugar*
- 2 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp nutmeg
- 1 cup buttermilk*
- 2 eggs, beaten
- 2 tbsp coconut oil, melted and cooled slightly
- 1 tsp vanilla extract
- 1 cup diced strawberries, fresh*
Strawberry Glaze
- 1/3 cup strawberries, pureed
- 2 cups powdered sugar
Instructions
- Preheat the oven to 425 F (220 C) and generously spray your donut pan with non-stick cooking spray. This will ensure your donuts release easily.
- In a large mixing bowl, whisk together the dry ingredients: flour, sugar, baking powder, salt, and nutmeg. Ensure there are no lumps and everything is well combined.
- In a separate microwave-safe bowl, melt the coconut oil. Allow it to cool for a few minutes until it’s just slightly warm to the touch, not hot. This prevents the eggs from scrambling.
- To the cooled coconut oil, add the buttermilk, beaten eggs, and vanilla extract. Whisk these wet ingredients together until they are fully incorporated.
- Pour the wet ingredient mixture into the bowl with the dry ingredients. Stir gently until just combined. Be careful not to overmix the batter, as this can lead to tough donuts. A few small lumps are perfectly fine.
- Gently fold in the diced fresh strawberries into the batter. Again, avoid overmixing. The batter will be quite thick, which is normal for baked donuts.
- Transfer the thick batter to a piping bag (or a large Ziploc bag with a corner snipped off). Pipe the batter evenly into each cavity of the prepared donut pan, filling them about two-thirds full.
- Bake the donuts for 7-9 minutes. Baking times can vary slightly depending on your oven; mine typically take 7 minutes. The donuts are done when they spring back lightly when gently poked and have a beautiful golden edge.
- Let the baked donuts cool in the pan for a few minutes. Then, carefully invert the pan onto a wire rack to allow the donuts to cool completely before glazing. This prevents sogginess.
- While the donuts are baking or cooling, prepare your glaze. Puree the fresh strawberries completely using an immersion blender or a regular blender until smooth. In a separate bowl, slowly add the powdered sugar to the pureed strawberries, about 1 cup at a time, whisking vigorously until the glaze is smooth and free of lumps. Adjust consistency with more powdered sugar if too thin, or a tiny bit of milk if too thick.
- Once the donuts are completely cooled, dunk them one by one into the strawberry glaze. Allow any excess glaze to drip off, then place them back on the wire rack to set for a couple of minutes before serving. If desired, sprinkle with additional festive sprinkles immediately after glazing.
These homemade baked strawberry donuts are at their peak flavor and texture when enjoyed immediately after glazing. However, they will remain delicious for up to 2 days if stored in an airtight container at room temperature. Please note that the glaze may soften and melt into the donuts slightly if left at room temperature for an extended period after the first day. For optimal glaze integrity, refrigeration can help, but allow them to warm up slightly before eating.
Notes
- If you do not have or prefer not to use coconut palm sugar, you can easily substitute it with an equal amount of granulated white sugar for the donut batter.
- No buttermilk on hand? No problem! You can make your own by adding 4 1/2 teaspoons of white vinegar or lemon juice to 1 cup of whole milk. Let it sit for 5-10 minutes until it slightly curdles before using.
- Frozen strawberries can be used in this recipe, provided they are pre-diced. It is important not to thaw them before adding them to the batter; use them directly from frozen to prevent excess moisture in the batter.
