  • 1/2 cup natural cocoa powder

  • 2 large eggs, at room temperature
  • 1/2 cup granulated sugar
  • 1/3 cup brown sugar, lightly packed
  • 1/3 cup grapeseed (or any neutral vegetable) oil
  • 1 tsp pure vanilla extract
  • 1/2 cup buttermilk, at room temperature*

White Chocolate Ganache Filling & Base for Buttercream

  • 8 oz chopped white chocolate (or high-quality white chocolate chips)
  • 1/3 cup heavy cream

White Chocolate Buttercream

  • 1/2 cup unsalted butter, softened to room temperature
  • 3 cups powdered sugar
  • 12 tbsp heavy cream (add as needed for desired consistency)
  • 1/2 cup white chocolate ganache (from the recipe above)

Dark Chocolate Buttercream

  • 1/2 cup unsalted butter, softened to room temperature
  • 1 1/2 cups powdered sugar
  • 1/4 cup natural cocoa powder
  • 12 tbsp heavy cream (add as needed for desired consistency)
  • 1 tsp pure vanilla extract
  • pinch of salt


Instructions

  1. Preheat your oven to 350°F (175°C) and meticulously line two standard-sized muffin pans with a total of 16 paper cupcake liners. Set these aside. In a large mixing bowl, meticulously sift together the all-purpose flour, cocoa powder, baking powder, baking soda, and salt. Whisk these dry ingredients thoroughly to ensure they are well combined and aerated.
  2. In a separate medium-sized bowl, whisk the room temperature eggs with both the granulated sugar and the lightly packed brown sugar until light and fluffy. Next, whisk in the grapeseed (or vegetable) oil and the pure vanilla extract until fully incorporated. Gradually add half of this wet mixture to the bowl of dry ingredients, stirring gently until just combined. Then, incorporate half of the room temperature buttermilk, stirring gently again. Finally, add the remaining wet ingredients, followed by the rest of the buttermilk, and stir until the batter is just smooth and no dry streaks remain. Avoid overmixing to keep your cupcakes tender.
  3. Carefully fill each cupcake liner only halfway full with batter. This step is crucial! Filling the liners more than halfway will cause the cupcakes to overflow during baking, affecting their shape and texture. Bake the cupcakes in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Once baked, remove the pans from the oven and allow the cupcakes to cool in their pans for 10 minutes before transferring them to a wire rack to cool completely.
  4. While the cupcakes are baking and cooling, prepare the luscious white chocolate ganache. Place the chopped white chocolate (or white chocolate chips) in a heat-safe bowl. In a small saucepan or microwave-safe container, gently heat the heavy cream until it is very hot and just begins to simmer, but do not let it come to a rolling boil. Remove the cream from the heat and immediately pour it over the white chocolate. Let the mixture sit undisturbed for exactly 3 minutes. This allows the heat to melt the chocolate. After 3 minutes, stir continuously and gently with a spatula or whisk until the ganache is completely smooth, glossy, and uniform. Place the ganache in the fridge to chill and firm up slightly until you are ready to use it for filling and buttercream.
  5. Once the cupcakes are fully cooled, use a sharp paring knife or a cupcake coring tool to gently remove about a 1-inch deep “plug” from the center of each cupcake. Carefully set aside the removed cake pieces. Using a small spoon or a piping bag, generously fill each cored hole with approximately 2 teaspoons of the chilled white chocolate ganache. You should have some ganache remaining for the white chocolate buttercream. Gently replace the reserved cake “plugs” back on top of the ganache-filled cupcakes, creating a neat surface for frosting.
  6. Prepare both buttercreams. Begin with the white chocolate buttercream. In the bowl of a stand mixer fitted with the paddle attachment, or using a handheld electric mixer, cream the softened unsalted butter until it’s light and whipped, about 30 seconds. Gradually add the powdered sugar and 1 tablespoon of heavy cream, mixing slowly at first to avoid a sugar cloud, then increasing speed until combined. Measure out 1/2 cup of the remaining white chocolate ganache and add it to the mixer bowl. Increase the mixer speed to high and beat until the buttercream is smooth, fluffy, and well-aerated. If the buttercream seems too stiff, add the additional tablespoon of heavy cream, a little at a time, until the desired spreadable consistency is achieved.
  7. Thoroughly scrape the white chocolate buttercream from the bowl and transfer it to a separate piping bag or bowl. Without needing to fully wash the mixer bowl, add the softened unsalted butter for the chocolate buttercream and mix on high for about 30 seconds until whipped. Add the powdered sugar, natural cocoa powder, and 1 tablespoon of heavy cream. Start mixing on low speed, then gradually increase to high until the ingredients are combined. Stir in the pure vanilla extract and a pinch of salt. Add the additional tablespoon of heavy cream if needed, mixing on high until the chocolate buttercream is light, fluffy, smooth, and easily spreadable or pipable.
  8. Finally, frost the tops of the cupcakes. For the iconic tuxedo look, alternate the different buttercreams or employ a two-toned piping approach with a single piping bag.
