There’s nothing quite like the joy of a beautiful sunny day, especially after a stretch of less-than-ideal weather. When the sun finally decides to grace us with its presence, my thoughts immediately turn to outdoor cooking. Grilling is not just a cooking method; it’s an experience, a celebration of good weather and good food shared with family. While the unpredictable summer weather can sometimes keep us indoors, those perfect grilling days are precious, and I always make sure to savor them to the fullest.

Recently, we were blessed with a couple of glorious days, prompting us to enjoy some time outdoors. A family walk, though accompanied by the inevitable mosquito encounters, was absolutely worth it for the fresh air and sunshine. And what better way to cap off such a day than with a fantastic grilled meal? My husband, Etienne, often takes the lead on the grill, which I certainly appreciate – less cooking for me, more time to relax!

When it comes to grilling chicken, we often prepare skewers, like our popular Greek Chicken Souvlaki. While delicious, cutting and skewering meat, along with preparing a marinade, can be a bit time-consuming. This is precisely why this incredibly easy pesto chicken recipe has become a staple in our household. It requires minimal prep, no intricate chopping, and its “marinade” is simply store-bought (or homemade!) pesto, transforming a simple chicken breast into a flavor sensation.

How to Make Flavorful Grilled Pesto Chicken

The beauty of this recipe lies in its remarkable simplicity. With just two primary ingredients – chicken and pesto – you can create a meal that tastes like it took hours of preparation. It’s the perfect solution for busy weeknights, last-minute gatherings, or whenever you crave maximum flavor with minimum fuss. Let’s dive into how to achieve this grilled perfection.

The Secret Ingredient: Pesto Perfection

The star of this dish, besides the chicken itself, is undeniably the pesto. You have two excellent options here: a high-quality store-bought pesto or a fresh, vibrant homemade version. While store-bought pesto offers unmatched convenience, particularly on busy days, whipping up your own pesto from scratch is surprisingly easy and incredibly rewarding if you have a few extra minutes and the right ingredients.

During the summer months, when basil is abundant in gardens and markets, I often find myself making large batches of homemade pesto, sometimes even freezing it for later use. Traditional pesto typically calls for pine nuts, but I’ve found that walnut basil pesto is a fantastic alternative. Walnuts are not only a favorite of mine but also a more budget-friendly option, delivering a rich, slightly earthy flavor that complements the basil beautifully. If you haven’t tried a walnut pesto yet, you’re in for a treat!

Pesto acts as a natural powerhouse marinade. Its oil content helps tenderize the chicken, while the basil, garlic, and cheese infuse every bite with an aromatic, savory depth. This means less work for you, as the “marinade” is ready to go straight from the jar or food processor.

Step-by-Step Grilling Guide for Pesto Chicken

Achieving perfectly grilled pesto chicken is a breeze with these simple steps:

1. Prepare the Chicken Breasts: Start by flattening your boneless, skinless chicken breasts. You can do this by placing them in a Ziploc bag and gently pounding them with a meat mallet like this one, or simply by pressing down firmly with the palm of your hand. The goal is to achieve an even thickness throughout the chicken. This ensures that the chicken cooks uniformly, preventing drier edges and an undercooked center. Aim for about 1/2 to 3/4 inch thickness.

2. Marinate for Flavor: Once flattened, generously smother the chicken breasts with approximately 1/4 cup of your chosen pesto. Place the chicken and pesto into a sealed bag or an airtight container and refrigerate for at least two hours. For maximum flavor, you can even marinate it overnight. This allows the vibrant flavors of the pesto to deeply penetrate the chicken, resulting in a juicier and more aromatic final product. Pesto’s olive oil base also contributes to tenderizing the meat, making it incredibly succulent after grilling.

3. Grill to Perfection: About 20 minutes before you plan to grill, remove the marinated chicken from the refrigerator to allow it to come closer to room temperature. This helps with even cooking. Preheat your grill to medium-high heat. Once the grill is hot, place the pesto-coated chicken breasts directly on the grates. Grill for about 7-8 minutes per side. The exact cooking time may vary based on the thickness of your chicken and the heat of your grill, so the best way to ensure doneness is to use a meat thermometer. The chicken is perfectly cooked when it reaches an internal temperature of 165°F (74°C).

4. Finish and Serve: Once cooked, remove the chicken from the grill. For an extra burst of flavor and a beautiful glossy finish, use a pastry brush to apply a little more fresh pesto over the hot chicken breasts before serving. This final touch truly elevates the dish.

Delicious Side Dish Ideas for Your Pesto Chicken

One of the many advantages of this easy pesto chicken is its versatility when it comes to pairings. It complements a wide array of side dishes, making meal planning effortless. For a classic summer meal, we often enjoy it with grilled corn on the cob and a simple pasta dish. Here are a few other delectable side dish ideas that pair wonderfully with the rich flavors of pesto chicken:

  • Roasted or Smashed Potatoes: Crispy on the outside, fluffy on the inside, these potatoes offer a comforting contrast to the savory chicken.
  • Mexican Street Corn Pasta Salad: A vibrant and zesty salad that brings a delightful textural and flavor contrast.
  • Strawberry Quinoa Salad: Light, fresh, and slightly sweet, this salad offers a refreshing balance, especially on warmer days.
  • Coconut Rice: Its subtle sweetness and creamy texture provide an exotic and soothing counterpoint to the robust pesto.
  • Garlic Breadsticks: Perfect for soaking up any extra pesto sauce and adding a satisfying crunch to your meal.
  • Simple Green Salad: A crisp green salad with a light vinaigrette can cut through the richness of the pesto and add freshness.
  • Grilled Vegetables: Asparagus, bell peppers, zucchini, or cherry tomatoes, lightly seasoned and grilled alongside the chicken, make for a healthy and complementary addition.
  • Caprese Salad: Fresh mozzarella, ripe tomatoes, and basil leaves drizzled with balsamic glaze would echo the flavors in the pesto beautifully.

No matter what you choose to serve alongside it, this pesto chicken dinner is destined to be one of the easiest, most flavorful meals you’ll make this season. It’s a testament to how simple ingredients can create extraordinary dishes.

Tips for Success & Variations

  • Don’t Overcook: Chicken can dry out quickly. Use a meat thermometer to ensure it reaches 165°F (74°C) and then remove it promptly from the heat.
  • Pesto Variations: Experiment with different types of pesto! Sun-dried tomato pesto can offer a sweet and tangy twist, while a kale or spinach pesto provides a greener, earthier flavor profile.
  • Oven-Baked Pesto Chicken: If grilling isn’t an option, you can bake the chicken. Preheat your oven to 400°F (200°C). Place the marinated chicken on a baking sheet and bake for 20-25 minutes, or until it reaches an internal temperature of 165°F (74°C).
  • Pan-Seared Pesto Chicken: For a quick stovetop meal, pan-sear the chicken in a hot skillet with a little olive oil until golden brown on both sides and cooked through.
  • Meal Prep Friendly: This recipe is excellent for meal prep. Cook a batch of pesto chicken at the beginning of the week, then slice it up to add to salads, sandwiches, or grain bowls for quick lunches or dinners.
  • Storage: Leftover cooked pesto chicken can be stored in an airtight container in the refrigerator for 3-4 days. It can also be frozen for up to 2 months. Thaw in the refrigerator before reheating gently.

Happy grilling! Here’s hoping for more of those beautiful, sunny days this summer, and perhaps time will slow down just a little so we can truly cherish these moments and meals.
