- 2/3 cup avocado oil (or vegetable oil)
- 1 cup unsweetened applesauce
- 1 cup organic sugar
- 1 tsp pure vanilla extract
- 1/2 cup boiling water
- 1 tsp espresso powder
- 2 cups all-purpose flour
- 1 cup cocoa powder
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
Vegan Buttercream
- 1 cup vegan butter, room temperature
- 4 cups powdered sugar
- 1–2 tbsp reserved beet liquid (from cooking beets)
