As summer gracefully transitions into autumn, there’s a bittersweet joy in savoring the last bounties of stone fruits. While the crisp air of fall begins to hint at the colder months ahead – a sentiment many of us in places like Calgary know all too well with an unexpected hailstorm! – the lingering warmth of these seasonal ingredients remains a comfort. This recipe is my final homage to the vibrant flavors of summer before we fully embrace cozy fall baking.

Even as the days shorten, grocery stores are still brimming with an abundance of delightful summer fruits. I recently indulged in a haul of juicy watermelon, plump cherries, and sweet blueberries. The anticipation of upcoming community events, like the annual Harvest Sale at Heritage Park, always excites me. Last year, I managed to snag an incredible amount of fresh, local produce at fantastic prices, and I can hardly wait to discover what treasures await me this year. For real-time updates and glimpses of my finds, be sure to keep an eye on my Instagram stories!

These particular cherry chocolate scones came into being a few weeks ago when I first acquired and photographed those gorgeous cherries. Little did I know, they would quickly become a new obsession in my kitchen! I’ve already baked them twice since then, and for good reason: they are simply *that* good. The ingenious part? I’ve designed the base of these scones without any refined sugar, primarily relying on the natural sweetness of maple syrup and the indulgence of chocolate chips. This clever substitution almost makes them feel like a health-conscious choice, yet their taste profile is unexpectedly decadent, rivaling any traditional scone in richness and satisfaction. It’s a truly guilt-free indulgence.

Unveiling the Key Ingredients for These Irresistible Chocolate Cherry Scones

The foundation of any great scone lies in its core ingredients, and these chocolate cherry scones are no exception. We start with the classic ensemble: unsalted butter, all-purpose flour, baking powder, a pinch of salt, and rich heavy cream. However, where most scone recipes call for granulated sugar, we opt for a healthier and equally flavorful alternative: pure maple syrup. This swap results in a scone that is less intensely sweet, allowing the deep notes of dark chocolate and the bright tartness of cherries to truly shine. If you appreciate the complex flavors of dark chocolate, you’ll find these scones perfectly balanced. Furthermore, the generous addition of semi-sweet chocolate chips within the dough and a luxurious chocolate drizzle on top more than compensate for any perceived lack of sweetness, adding layers of rich flavor and texture.

To achieve their distinctive chocolatey hue and depth of flavor, unsweetened cocoa powder is a must. It infuses the scones with that deep, robust chocolate taste without adding extra sugar. A touch of pure vanilla extract elevates the overall aroma and flavor profile, harmonizing beautifully with both the chocolate and the cherries. The star fruit of this recipe, fresh cherries, should be pitted and diced. Approximately 6 ounces (about 1 cup) are needed, providing bursts of juicy, slightly tart sweetness in every bite. Selecting ripe, firm cherries will ensure the best texture and flavor in your finished scones.

Can You Use Frozen Cherries in This Scone Recipe? Absolutely!

One of the beauties of this recipe is its flexibility when it comes to fruit. Yes, you can absolutely use frozen cherries! There are a couple of important tips to keep in mind for the best results. First, always dice your frozen cherries directly from the freezer; do not thaw them beforehand. Thawing can release too much moisture, potentially making your scone dough sticky and difficult to handle, and could lead to a less flaky texture. Adding them frozen helps maintain the integrity of the dough and prevents the cherries from bleeding too much color into the batter.

While fresh cherries offer a delightful pop of flavor and texture, frozen cherries are a convenient and readily available alternative, especially when fresh ones are out of season. Simply measure them out, give them a quick chop while still frozen, and incorporate them into the dough as instructed. I haven’t personally experimented with maraschino cherries in this particular recipe, but I imagine they would offer a uniquely sweet and “candied” flavor profile. If you decide to try them, be aware that their intense sweetness might alter the overall balance of the scone, making the final product considerably sweeter than intended with fresh or frozen tart cherries. You might consider slightly reducing the maple syrup if using maraschino cherries to maintain a balanced sweetness.

Mastering the Art of Making Chocolate Cherry Scones: A Step-by-Step Guide

Creating perfect, flaky scones is a rewarding experience, and with a few key techniques, you’ll achieve bakery-quality results right in your own kitchen. Let’s walk through the process:

Begin by preparing your dry ingredients. In a large mixing bowl, thoroughly whisk together the all-purpose flour, rich cocoa powder, reliable baking powder, a hint of cinnamon for warmth, and a pinch of salt. Whisking ensures that all these dry components are evenly distributed, which is crucial for uniform leavening and flavor throughout your scones.

Next comes the critical step of incorporating the butter. For truly flaky scones, the butter must be very cold. I highly recommend using a box grater to shred the frozen unsalted butter into small, delicate pieces – it will surprisingly resemble grated mozzarella cheese! These tiny shreds of butter, when cut into the dry mixture using a pastry cutter or two forks, will create small clumps. This method ensures that the butter remains in discrete pockets within the dough. As the scones bake, these pockets of cold butter release steam, creating those signature flaky layers that are the hallmark of a perfect scone. Avoid overworking the butter into the flour; you want distinct, pea-sized pieces, not a fully combined paste.

In a separate, smaller bowl, combine the wet ingredients. Whisk together the heavy cream, the maple syrup (our natural sweetener), the fragrant vanilla extract, and one large egg. Ensure this mixture is well-combined before proceeding. Pour the wet ingredients into the dry mixture. Using a large wooden spoon or a sturdy spatula, gently mix everything together until a soft, shaggy dough begins to form. The key here is to mix until *just combined*. Overmixing will develop the gluten in the flour, leading to tough scones rather than tender ones. Once the dough comes together, gently fold in the pitted and diced fresh cherries and the semi-sweet chocolate chips. Again, mix minimally to distribute them evenly without mashing the cherries.

Turn the dough out onto a lightly floured surface. With floured hands, gently pat and shape the dough into an 8-inch circle, approximately 1 to 1.5 inches thick. Transfer this circle onto a piece of parchment paper placed on a baking sheet. Using a sharp knife or a pizza cutter, carefully slice the circle into 8 equal wedges, similar to cutting a pie. This technique ensures consistent scone sizes and helps them bake evenly. Preheat your oven to 400°F (200°C) and bake the scones for 18-19 minutes, or until they are golden brown and a toothpick inserted into the center comes out clean. The timing can vary slightly depending on your oven, so keep an eye on them.

Once baked, remove the scones from the oven. While still warm, use a sharp knife to reinforce the pre-cut lines between the wedges, making them easier to separate. Then, using a spatula, gently transfer the individual scones from the baking sheet to a wire cooling rack. Allow them to cool completely. This cooling step is important for the chocolate drizzle. Once fully cooled, melt the remaining 1/2 cup of chocolate chips. You can do this in the microwave in 30-second intervals, stirring until smooth, or using a double boiler. Drizzle the luscious melted chocolate generously over each scone for an extra layer of decadence and visual appeal. Now, they are ready to be savored!

Tips for Perfect Scones Every Time:

  • Keep Ingredients Cold: This cannot be stressed enough. Cold butter and cold cream are vital for a flaky texture.
  • Don’t Overmix: Mix the dough just until it comes together. A shaggy dough is a good dough. Overmixing leads to tough scones.
  • Handle Gently: Scone dough is delicate. Handle it as little as possible to prevent excess gluten development.
  • Even Baking: Ensure your scones are evenly spaced on the baking sheet to allow for proper air circulation and consistent baking.
  • Test for Doneness: A toothpick inserted into the center should come out clean. The bottoms should be golden brown.

Serving Suggestions & Storage:

These chocolate cherry scones are absolutely divine on their own, perhaps with a cup of freshly brewed coffee or a soothing cup of tea. For an extra special treat, consider serving them with a dollop of clotted cream or a light fruit jam. They make an ideal breakfast pastry, a delightful afternoon snack, or a sweet finish to any meal.

To store any leftover scones, place them in an airtight container at room temperature for 2-3 days. For longer storage, these scones freeze beautifully. Simply place the cooled scones in a freezer-safe bag or container for up to 2 months. When you’re ready to enjoy them, thaw at room temperature and warm gently in the oven for a few minutes to restore their fresh-baked texture.

Ingredients

Scale

  • 2 1/4 cups all-purpose flour
  • 1/3 cup cocoa powder
  • 2 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, frozen
  • 1/2 cup heavy cream
  • 1/2 cup maple syrup
  • 1 egg
  • 1 1/2 tsp pure vanilla extract
  • 1 cup semi-sweet chocolate chips, divided
  • 6 oz fresh cherries, pitted and diced*

Instructions

  1. Preheat the oven to 400 F (200 C) and line a baking sheet with parchment paper. In a large mixing bowl, whisk together the flour, cocoa powder, baking powder, cinnamon, and salt. Using a large box-hole grater, grate the frozen butter thoroughly. Add the frozen butter to the dry ingredients and use a pastry cutter or two forks to cut in the butter until a pea-like mixture is formed.
  2. In a separate bowl, whisk together the cream, maple syrup, egg, and vanilla extract. Add the wet ingredients to the dry and stir everything together until just combined. Add in 1/2 cup of the chocolate chips and cherries and stir together gently.
  3. Empty the scone dough on to a lightly floured surface, and using floured hands, shape the dough into an 8″ circle, about 1-1.5 inches thick. If the dough is sticky, add a little more flour to the dough and/or your hands. Using a sharp knife or a pizza cutter, slice the circle into 8 equal pieces. Place the pieces on the prepared baking pan. Bake the scones for 18-19 minutes, or until a toothpick comes out clean.
  4. Once you remove the scones from the oven, use a sharp knife to separate the individual scones along the cut lines, and use a spatula to gently remove them from the baking sheet to a cooling rack. Once cooled, melt the remaining 1/2 cup of chocolate chips in the microwave, heating in 30-second increments until smooth. Drizzle the chocolate all over the baked scones. Enjoy!

Leftover scones will keep at room temperature, in an airtight container, for 2-3 days or in the freezer for up to 2 months.
