Chapter Three: Spring

Festive Easter M&Ms for spring bakingThe Arrival of Spring: A Season of Renewal and Joy

There’s a special magic that descends upon the world when spring arrives. The days grow longer, the air takes on a crisp, fresh scent, and the vibrant hues of nature awaken from their winter slumber. It’s a time of renewal, of new beginnings, and a gentle reminder of the beauty that surrounds us. This profound sense of optimism is perfectly captured in a quote from one of my all-time favorite children’s books, If I Could Have Been There by Jamie L.A. Hendricks: “This time of year is very nice, as spring brings all things new. What would make it very special is to spend the day with you”!

This heartwarming sentiment resonates deeply with me, not just for its poetic simplicity, but also for the cherished memories it evokes. This very book was a thoughtful gift from my wonderful Aunt Linda when my son Oscar was born, and every time I turn its pages, I’m transported back to the joy and anticipation of new life. It also unfailingly reminds me of my dear Dad, who possessed an infectious love for spring and all the fresh, promising wonders it brought with it. His enthusiasm for the season was truly contagious, and I often find myself looking for signs of spring through his eyes. This connection to family, tradition, and the simple beauty of nature is what truly makes this time of year so special.

Embracing the Spirit of Easter: Family, Food, and Festivities

Spring, with its theme of new life and rebirth, naturally goes hand in hand with the joyous celebration of Easter. This beloved holiday is more than just a date on the calendar; it’s an opportunity to gather with loved ones, share laughter, and create lasting memories. Whether you’re planning a grand family feast, a cozy brunch with close friends, or a delightful egg hunt for the little ones, the essence of Easter lies in connection and celebration. Good food, of course, plays an integral role in these festivities. If you’re looking for an unforgettable treat to add to your Easter spread, and you haven’t yet tried my incredibly popular Mini Egg Skillet Cookie, you are truly missing out on a delightful indulgence that will be a definite crowd-pleaser!

A Culinary Journey into Spring: Vibrant Flavors and Sweet Creations

As the seasons shift, so too does our culinary inspiration. Gone are the heavy, comforting flavors of winter, making way for the light, fresh, and vibrant tastes of spring. This is my absolute favorite time to experiment in the kitchen, drawing inspiration from blooming gardens and bountiful farmer’s markets. I’m brimming with ideas for new recipes that burst with the natural sweetness of berries and the zesty tang of citrus. Imagine desserts infused with bright hints of lemon and lime, or delicate pastries adorned with the natural beauty of strawberries, blueberries, and raspberries. The color palette of spring baking is also a joy, with pastel hues and cheerful sprinkles transforming simple treats into edible works of art. My mind is constantly buzzing with new concepts, and I can’t wait to share them all with you. So many delicious recipes, so little time to bake them all!

An Easter Escape: Family Adventures in Kelowna

This year, our family Easter celebration takes us on an exciting journey to beautiful Kelowna, British Columbia. We are incredibly fortunate to be spending the holiday with Etienne’s sister and her wonderful family, who have generously opened their home to us. Their place truly feels like our own little vacation paradise – a serene escape from the everyday hustle. The heart of their home, for me, is undoubtedly the most wonderful balcony, conveniently located just off the kitchen. From this vantage point, you overlook a sprawling, lush golf course, offering a picturesque backdrop for relaxation. There’s something incredibly therapeutic about stretching out on the cozy couch on that balcony, watching the delicate hummingbirds flit by, and listening to the melodic chirping of birds – occasionally punctuated by the distant, rhythmic thwack of a golf ball. It’s relaxation at its absolute finest, and a glass of chilled wine in hand is the only thing missing to complete this idyllic scene.

Since we won’t be celebrating Easter in the comfort of our own home this year, I’ve taken on the delightful task of bringing the magic of the Easter bunny with us. I’ll be packing along an assortment of treats and colorful baskets to surprise the kids with on Easter morning, ensuring their holiday is filled with joy and excitement, no matter where we are. And, of course, no visit to family is complete without a homemade gift! I’ll be bringing a freshly baked batch of my delightful Easter-sprinkled Chocolate Dipped Almond-Vanilla Biscotti, a perfect treat for my sister and brother-in-law to enjoy with their morning coffee or an afternoon tea.

Navigating Travel with Little Ones: Tips and Triumphs

The journey to Kelowna promises its own set of adventures. I’ll be flying solo with our two energetic boys, while Etienne bravely takes on the task of driving the car, packed to the brim with all our essential (and seemingly endless) “stuff.” It’s truly remarkable how much gear you accumulate and seemingly “need” once you have children. Highchairs, playpens, strollers, car seats, an endless supply of snacks and toys – they can fill up a car’s trunk space astonishingly quickly! I vividly recall my last solo flight with the boys. Wally was only about two months old then, and let’s just say he wasn’t exactly the most “chill” baby. Combined with a busy toddler, it made for quite the challenging journey. Luckily, I had the kindest gentleman sitting next to me, who was incredibly understanding and patient with my fussy infant and curious two-year-old. His compassion made a world of difference. This time, I’m optimistically hoping for a much smoother and more relaxed travel experience. The rewards of shared family time and creating new memories far outweigh any travel hurdles.

Happy boys ready for adventure, enjoying family time

Our Favorite Spring Indulgences: Recipes to Brighten Your Day

Spring truly inspires a fresh wave of baking creativity, transforming humble ingredients into delightful treats. Here are a few of my go-to recipes that perfectly encapsulate the spirit of the season:

  • The Irresistible Mini Egg Skillet Cookie: Imagine a warm, gooey, chocolate chip cookie, baked to perfection in a cast-iron skillet, and studded with vibrant, crunchy mini chocolate eggs. This Mini Egg Skillet Cookie is not just a dessert; it’s an experience. It’s incredibly easy to make, perfect for sharing (or not!), and its festive appearance makes it an absolute showstopper for any Easter gathering or spring celebration. The contrasting textures and rich chocolate flavor are simply divine, making it a beloved favorite for all ages.

  • Elegant Chocolate-Dipped Almond-Vanilla Biscotti: For those who appreciate a more refined yet equally delicious treat, my Chocolate Dipped Almond-Vanilla Biscotti are an ideal choice. These twice-baked Italian cookies are wonderfully crisp and infused with delicate almond and vanilla notes. Dipped in rich melted chocolate and adorned with colorful Easter sprinkles, they become an exquisite accompaniment to your morning coffee or afternoon tea. They also make a thoughtful and impressive homemade gift, embodying both elegance and a touch of festive cheer.

  • Festive White Chocolate Chunk Almond Butter Cookies with Pastel M&M’s: Building on the beloved flavor profile of my White Chocolate Chunk Almond Butter Cookies, I love to give them a seasonal twist. By incorporating pastel-colored M&M’s, these cookies transform into a visually appealing and incredibly fun treat that perfectly captures the lightness and joy of spring. The creamy almond butter base provides a wonderful depth of flavor, complemented by the sweet chunks of white chocolate, while the M&M’s add a playful crunch and vibrant pop of color. I’m even contemplating taking this idea a step further and turning them into a gigantic skillet cookie – seriously, the possibilities for fun and flavor are endless!
