They are perfectly moist, incredibly filling, and boast just the right touch of heat, which, delightfully, you can easily customize to your preference.
As a devoted foodie, the question my children frequently pose – “What’s your favorite food?” – is always a delightful, yet challenging, one. While singling out just one dish feels almost impossible, my answer almost invariably includes “Thai food.” There’s something truly special about its complex balance of sweet, sour, salty, and spicy. And the versatility of a good red Thai curry paste is simply astonishing; it’s not limited to just curries, as many might assume. When skillfully blended with succulent ground turkey, it transforms into an extraordinary foundation for a fantastic summer meal that’s both light and deeply satisfying. This recipe perfectly showcases how a few key Thai ingredients can elevate a simple burger into an exotic and memorable dining experience.

Essential Ingredients for Your Thai Turkey Burger Masterpiece
Embarking on any culinary adventure begins with gathering your provisions, and this delicious Thai turkey burger recipe is no exception. Having all your ingredients prepped and ready before you begin will ensure a smooth and enjoyable cooking process. For these vibrant and incredibly flavorful Thai turkey burgers, you’ll need the following components:
- Lean Ground Turkey: The foundation of our healthy burger, providing a light yet robust base.
- Fresh Diced Green Onions: Adding a mild, crisp oniony flavor and a touch of color to the patties.
- Panko Breadcrumbs: Key for binding the patties and ensuring a delightful texture, preventing them from being too dense.
- Natural Peanut Butter: A secret ingredient that adds a creamy richness and a subtle nutty depth, quintessential to Thai flavors.
- Thai Red Curry Paste: The star of the show, infusing the burgers with authentic, aromatic, and spicy Thai character.
- Fresh Garlic Cloves, Minced: For that essential pungent and savory kick that enhances all the other flavors.
- Lime (Zest and Juice): Providing bright, zesty acidity to cut through the richness and elevate the overall freshness of the burger.
- Fresh Ginger, Minced: Offering a warm, spicy, and fragrant counterpoint to the garlic and curry paste.
- Sesame Oil: Used for frying, it imparts a distinct nutty aroma and ensures a beautifully golden, crispy crust.
- Mayonnaise: The creamy base for our irresistible burger sauce.
- Thai Sweet Chili Sauce: Mixed with mayo, it creates a perfectly balanced sweet and spicy condiment.
- Burger Buns: Your choice of soft, sturdy buns to hold all the deliciousness.
- Shredded Green Cabbage: Adds a refreshing crunch and a hint of peppery freshness.
- Shredded Carrot: For natural sweetness and vibrant color, contributing to your daily vegetable intake.
- Salted, Roasted Peanuts: A textural delight, providing a salty crunch and echoing the peanut flavor in the patty.

Are Thai Turkey Burgers a Healthy Choice?
Beyond their incredible taste, these Thai Turkey Burgers offer a fantastic, health-conscious alternative to traditional beef burgers. Ground turkey is renowned for being a significantly leaner protein source, naturally containing less saturated fat while still delivering a substantial amount of essential nutrients. In fact, ground turkey is particularly noted for its content of polyunsaturated fats – a healthier type of fat that can contribute positively to your diet. Opting for turkey over beef can be a smart move towards reducing overall fat intake without sacrificing flavor or satisfaction.
But the health benefits don’t stop there! These burgers are thoughtfully designed to incorporate even more goodness into your meal. When assembled, the vibrant toppings of shredded green cabbage and carrots contribute a generous portion of vegetables directly into your bun. This not only adds a delightful crunch and fresh flavor but also helps you effortlessly meet some of your daily recommended vegetable servings. So, you’re not just enjoying a mouth-watering meal; you’re also making a nutritious choice that supports a balanced lifestyle. These healthy turkey burgers are truly a win-win for your taste buds and your well-being!
Secrets to Perfectly Formed Thai Turkey Burgers: Keeping Them Intact
One common concern when making turkey burgers is their tendency to fall apart, especially given the lean nature of ground turkey. Traditional burger recipes often rely on ingredients like eggs and breadcrumbs to act as binders, ensuring the patties hold their shape during cooking. For this particular Thai turkey burger recipe, I’ve chosen to omit the egg, simplifying the ingredient list without compromising structural integrity. Rest assured, these flavorful patties will still hold together beautifully, provided you apply a little care and a couple of key techniques.
The first secret lies in the preparation of the patties themselves. When you’re pressing the mixture into individual burger shapes, it’s crucial to pack the meat tightly between your hands. A firm but gentle hand will ensure that the ingredients are well-integrated and that the patty is dense enough to withstand the cooking process. Don’t be shy about really compressing them, as this initial step is vital for a sturdy burger.
The second crucial tip concerns the cooking method. To achieve the best results – moist patties with a delicious, crispy exterior – it’s highly recommended to cook these turkey burgers in a frying pan on the stovetop, rather than on an outdoor grill. Grilling, while excellent for some burgers, can be challenging for leaner turkey patties, as they are more prone to drying out or falling through the grates. A frying pan provides a controlled, even heat source that helps the patties cook thoroughly while retaining their moisture and forming that coveted browned crust. This method ensures your Thai turkey burgers are perfectly cooked, tender, and stay in one magnificent piece until they reach your plate.
Crafting Your Delicious Thai Turkey Burgers: A Step-by-Step Guide
Whipping up these incredible Thai Turkey Burgers is a surprisingly quick and straightforward process, taking approximately 20-25 minutes from start to finish. For maximum efficiency and to make the cooking experience even more enjoyable, consider a bit of advance preparation. You can easily save time by shredding the cabbage and carrots ahead of time, mixing together the creamy mayo and sweet chili sauce, and mincing your garlic and ginger in advance. This “mise en place” approach will streamline your cooking flow, allowing you to enjoy the process and the fantastic end result even more.
- Prepare the Patty Mixture: In a generously sized mixing bowl, combine the lean ground turkey with the finely diced green onions, Panko breadcrumbs, natural peanut butter, aromatic Thai red curry paste, freshly minced garlic, the bright zest and juice from your lime, and the fragrant grated ginger. Using your hands or a sturdy spoon, gently but thoroughly mix all the ingredients together until they are well combined. Be careful not to overmix, as this can make the turkey tough.
- Form the Burger Patties: Line a baking sheet with parchment paper – this prevents sticking and makes cleanup a breeze. Carefully divide the seasoned turkey mixture into four equal-sized portions. While you don’t need absolute precision, a kitchen scale can be used if you desire perfectly uniform burgers. With clean hands, roll each portion into a compact ball, then gently flatten it into the classic burger patty shape, about 3/4 to 1 inch thick. Place all four formed patties onto the parchment-lined baking sheet, ready for cooking.
- Heat the Pan: Place a large frying pan (a 12-inch pan works perfectly for fitting all four patties) on your stovetop. Add the sesame oil and heat it over medium heat for 1-2 minutes, or until it shimmers lightly, indicating it’s ready for cooking. If your pan is smaller, you might need to cook the burgers in batches to avoid overcrowding, using half the oil for each batch.
- Cook the Burgers to Perfection: Carefully place the burger patties into the hot pan, ensuring they don’t touch each other if cooking all at once. Fry them on one side for at least 4-5 minutes, allowing them to develop a beautiful crispy, golden-brown crust. With a gentle touch, carefully flip the patties to the other side and continue frying for an additional 4-5 minutes, or until a meat thermometer inserted into the center of the thickest part of the patty reads 160°F (71°C). This ensures they are cooked through and safe to eat.
- Assemble the Toppings and Sauce: While the burgers are cooking, prepare your delectable sauce and bun toppings. In a small dish, thoroughly mix together the mayonnaise and Thai sweet chili sauce. You can toast your burger buns lightly in a toaster or pan for extra texture if desired. Generously spread the prepared sauce over both halves of each burger bun. On the bottom half of each bun, layer a portion of the crisp shredded green cabbage, the sweet shredded carrot, and about a tablespoon of the salted, roasted peanuts for an irresistible crunch.
- Final Assembly and Enjoyment: Once your Thai turkey burgers are perfectly cooked and ready, carefully place one piping hot patty onto the prepared bottom half of each bun. Crown it with the top half of the bun, and there you have it – a magnificent, flavor-packed Thai Turkey Burger, ready to be devoured! Serve immediately and savor every incredible bite.

Can You Freeze Thai Turkey Burgers for Later Enjoyment?
Absolutely! These versatile Thai turkey burgers are perfect for meal prepping and can be easily frozen, allowing you to enjoy their fantastic flavors long after they’re made. Freezing turkey burgers is a smart way to ensure you always have a quick, healthy, and delicious meal option on hand. You have two convenient methods for freezing: either before cooking the patties or after they’ve been fully cooked. Both options offer great results, depending on your future meal plans.
Freezing Uncooked Patties:
If you prefer to freeze the patties before cooking, follow these simple steps for optimal freshness. After you’ve formed the raw turkey burger patties as described in the recipe, arrange them in a single layer on a parchment-lined baking sheet. Place the entire baking sheet into the freezer for approximately 20-30 minutes, or until the patties are completely solid and frozen through. This initial freezing step is crucial as it prevents the patties from sticking together once they are stored. Once frozen solid, carefully remove the patties from the baking sheet and transfer them to a freezer-safe ziploc bag or an airtight container. Label the bag with the date, and your uncooked Thai turkey burger patties will keep beautifully for up to 2 months. When you’re ready to cook them, you can either thaw the patties overnight in the refrigerator for quicker cooking or cook them directly from frozen on low heat, extending the cooking time slightly to ensure they are thoroughly cooked to 160°F (71°C).
Freezing Cooked Patties:
For even greater convenience, you can also freeze the burger patties after they have been fully cooked. The key to successful freezing of cooked food is to ensure it’s completely cooled before storage. Once your Thai turkey burgers are cooked through, let them cool down entirely to room temperature. This prevents ice crystals from forming, which can affect texture. Once cooled, place the cooked patties into a freezer-safe bag or an airtight container, again labeling with the date. Cooked frozen patties can also be stored for up to 2 months. To reheat, you can use a frying pan, oven, or even a microwave until they are hot and ready to enjoy. This method is perfect for quick lunches or dinners when you have minimal time but still crave a homemade, flavorful meal.
Having a stash of these healthy turkey burgers in your freezer means you’re always prepared for a satisfying meal, whether it’s a busy weeknight or an impromptu craving for something exotic and delicious.

Undeniably one of the best turkey burger recipes around, these Thai turkey burgers are made with wholesome ingredients and pack a punch of flavour! You’ll love these hearty, filling turkey burgers!
Ingredients
Scale
- 1 lb ground turkey
- 2 green onions, finely diced
- 1/4 cup Panko breadcrumbs
- 2 tbsp natural peanut butter
- 2 tsp Thai red curry paste
- 2 cloves garlic, minced
- 1 tsp fresh lime juice
- 1 tsp fresh lime zest
- 1 tbsp finely grated ginger*
- 2 tbsp sesame oil
- 1/4 cup mayonnaise
- 3 tbsp Thai sweet chilli sauce
- 4 large burger buns
- 1/2 cup shredded green cabbage
- 1/2 large carrot, shredded
- 1/4 cup salted, roasted peanuts
Instructions
- In a large mixing bowl, combine the ground turkey with the green onions, Panko crumbs, peanut butter, Thai curry paste, minced garlic, lime juice and zest, and the grated ginger. Stir everything together until well combined.
- Line a baking sheet with parchment paper, then divide the turkey mixture into 4 equal sized portions (it doesn’t have to be exact). Form a ball with each of the individual portions, and lightly flatten it into the shape of a patty, using your hands. Place all 4 patties on the parchment lined baking sheet.
- In a large frying pan on the stove, heat the sesame oil over medium heat for 1-2 minutes or until it is shimmering.
- If you can fit them all at once without touching, place all 4 patties into the pan at once; however, if you can only fit 2 at a time, you can do this in batches. Fry the patties on one side for at least 4-5 minutes or until crispy and brown on one side, before carefully flipping them to the other side and frying for an additional 4-5 minutes or until a thermometer inserted in the center of the patties reads 160 F.
- While the patties are frying, mix together the mayo and sweet chilli sauce together in a small dish. Apply a generous amount of the sauce over all sides of each of the burger buns. On the bottom portion of the buns, add the green cabbage, shredded carrot and about a tablespoon of roasted peanuts.
- Once the burgers are cooked through, place one burger on the prepared bottom half of each bun. Top it with the top half of the bun, and enjoy!
Leftover burger patties can be frozen for up to 2 months in an airtight container. See the blog post above for further freezing instructions.
