There’s an undeniable joy that comes with turning holiday dinner remnants into something entirely new and exciting. While a traditional turkey dinner holds a special place in our hearts, the true culinary adventure often begins with the leftovers. As a dedicated enthusiast of turkey sandwiches – this marks my fourth creation shared on the blog – I firmly believe the possibilities for that perfectly cooked, succulent meat are virtually endless. Instead of simply reheating a plate, imagine reinventing those delicious components into a completely different, yet equally satisfying, culinary experience.
From a vibrant Turkey Pesto Sandwich bursting with fresh herbs and zesty flavors, to a comforting Cranberry Turkey Sandwich that beautifully balances sweet and savory notes, or even a hearty Leftover Turkey Stuffing Casserole, turkey offers incredible versatility. Each recipe showcases a different facet of this magnificent bird, proving that turkey isn’t just for festive feasts; it’s a year-round hero that lends itself beautifully to creative concoctions.
The newest addition to this beloved collection is the Grilled Buffalo Turkey Sandwich, a creation that has quickly become a household favorite, particularly for its vibrant heat and robust flavor profile. My husband, a self-proclaimed connoisseur of all things spicy, gravitates towards this sandwich for its exhilarating kick, reminiscent of classic buffalo hot wings. It captures that distinctive tangy heat and marries it with tender turkey and gooey cheese, delivering all the excitement without the mess of traditional wings. If you’re someone who savors the zesty, spicy punch of buffalo sauce, then prepare to fall in love with this sandwich; it’s a truly extraordinary way to enjoy turkey, anytime.

The Ultimate Leftover Makeover: Why This Sandwich Shines
In the culinary landscape, the grilled buffalo turkey sandwich stands out as a brilliant way to revitalize leftover turkey. It’s not merely about assembling ingredients; it’s about transforming them into a harmonious symphony of textures and tastes. Imagine tender, seasoned turkey breast, imbued with the fiery zest of buffalo sauce, layered between slices of crisp, buttered bread, and melted to perfection with a blend of creamy, rich cheeses. This isn’t your average hurried lunch; it’s a thoughtfully crafted meal that maximizes flavor and minimizes effort, delivering a gourmet experience right in your kitchen.
This recipe is particularly appealing for its ability to convert what might be considered ordinary leftovers into something truly extraordinary. It leverages the inherent succulence of turkey, enhancing it with a familiar, crowd-pleasing flavor profile that appeals to both adults and adventurous eaters alike. The beauty lies in its simplicity and the profound satisfaction it delivers, proving that sometimes, the best meals are born from a little ingenuity and a lot of flavor. It’s a testament to creative cooking, transforming simple components into a memorable dish that will have everyone asking for seconds. Plus, it’s an incredibly efficient way to ensure no delicious turkey goes to waste after a large meal.
Gather Your Ingredients: Essential Components for Flavor
The foundation of any great dish lies in its ingredients, and this grilled buffalo turkey sandwich is no exception. While having leftover turkey from a recent holiday dinner puts you at a distinct advantage – literally halfway to sandwich perfection – there are several flexible options to ensure you can whip up this delightful meal anytime inspiration strikes. If your fridge isn’t currently stocked with holiday remnants, fear not! You can easily cook a turkey breast specifically for this recipe, either on the stovetop for speed or in the oven for a more hands-off approach. Alternatively, many grocery stores offer high-quality pre-cooked turkey breast, making this a convenient option for any busy weeknight, ensuring that this delicious sandwich is always within reach.
Here’s a detailed look at the core components you’ll need to assemble this mouthwatering sandwich, along with tips for selection and preparation:
- 100 grams cooked turkey breast, in small pieces: The star of our sandwich! Whether you’re using white meat, dark meat, or a mix, ensure your turkey is finely shredded or diced into small, manageable pieces. This allows it to thoroughly absorb the buffalo sauce, ensuring every bite is packed with flavor, and also distributes evenly within the sandwich for a consistent texture.
- 2 tbsp buffalo hot sauce: This is where the magic happens! Choose your favorite brand of buffalo hot sauce to control the heat and tang level. Frank’s RedHot is a classic choice, offering a balanced blend of cayenne pepper, vinegar, and garlic that’s iconic for buffalo flavor. Feel free to adjust the amount based on your preference for spice.
- 1 tbsp unsalted butter (for turkey): Used to warm the turkey and help the buffalo sauce coat the meat beautifully, creating a rich, flavorful filling that’s tender and juicy. Unsalted butter allows you to control the overall sodium content of your dish.
- 2 slices French bread: The choice of bread is crucial for a perfect grilled sandwich. French bread, with its sturdy crust and soft, airy interior, crisps up wonderfully when buttered and grilled, creating a delightful crunch. Its robust structure holds up exceptionally well to the rich, saucy filling without becoming soggy, making it an ideal candidate for grilling.
- 2 tbsp ranch dressing: A cool, creamy ranch dressing provides the perfect counterpoint to the spicy buffalo turkey. It adds a layer of tanginess and moisture, enhancing the overall flavor balance and offering a cooling effect against the heat of the buffalo sauce. For the best flavor, opt for a high-quality ranch.
- 1 large slice cheddar cheese: Cheddar cheese brings a sharp, robust, and slightly nutty flavor that melts beautifully, creating that irresistible gooey texture essential for any grilled cheese-style sandwich. Its assertive flavor stands up well to the strong buffalo sauce.
- 1 large slice Monterey Jack cheese: Complementing the cheddar, Monterey Jack is known for its mild, buttery flavor and exceptional meltability. It contributes to a wonderfully smooth, cohesive, and incredibly gooey cheesy layer. The combination of cheddar and Monterey Jack offers both flavor depth and a fantastic, stretchy melt.
- 1 tbsp diced chives: Fresh chives add a delicate oniony flavor and a touch of vibrant green color. Their subtle fresh bite cuts through the richness of the cheese and sauce, providing a refreshing aromatic lift to the sandwich.
- 2 tbsp unsalted butter, room temperature (for grilling): This butter is essential for achieving that coveted golden-brown, irresistibly crispy exterior on your bread. Ensuring it’s at room temperature makes it much easier to spread evenly across the bread, preventing any patchy browning and guaranteeing a uniformly delicious crust.

Remember, while leftover turkey is a bonus, the flexibility of this recipe means you’re never far from creating this delicious sandwich. The next time you find yourself with ample holiday turkey, make a mental note – or better yet, a written one – to reserve some for this incredible grilled buffalo turkey sandwich. It’s a game-changer for post-holiday meal planning and a testament to the joy of reinventing your culinary staples!
Mastering the Grill: Step-by-Step Sandwich Perfection
Creating this grilled buffalo turkey sandwich is a straightforward process, designed for ease and maximum flavor. Follow these detailed steps to achieve a perfectly crispy exterior and a wonderfully gooey, spicy interior, turning simple ingredients into a gourmet delight:
- Prepare the Buffalo Turkey Filling: Begin by heating a medium-sized skillet or frying pan over medium heat on your stovetop. Add the pre-cooked turkey breast, buffalo hot sauce, and 1 tablespoon of unsalted butter to the pan. Using a wooden spatula or spoon, stir the ingredients together constantly, breaking up any larger pieces of turkey to ensure even coating. Cook for approximately 3-4 minutes, or until the turkey is thoroughly warmed through and completely coated with the buffalo sauce. You’ll notice the sauce will slightly thicken as it cooks, clinging beautifully to the turkey. Once heated and coated, remove the turkey mixture from the pan and set it aside in a bowl.
- Prepare the Bread with Ranch: Carefully wipe out the pan to remove any sauce residue, ensuring a clean surface for grilling the sandwich. Lay the two slices of French bread flat on a clean cutting board. Take your ranch dressing and, using a table knife or a small spatula, spread an even and generous layer of dressing onto one side of each bread slice. This creamy, tangy layer will add a crucial flavor dimension and moisture to the sandwich, perfectly complementing the spicy turkey.
- Assemble the Sandwich: Now, it’s time to build your masterpiece. Place all of your cheese slices – both cheddar and Monterey Jack – onto one of the bread slices. Ensure the cheese covers the entire surface to create a fantastic melt barrier. Distribute the prepared buffalo turkey mixture evenly over the cheese layer. Generously scatter the diced fresh chives on top of the turkey for a burst of freshness and color. Place the remaining slice of bread, ranch-side down, on top of the turkey and chives, completing your sandwich structure. For the perfect crisp, take your room temperature butter and spread it generously and evenly on the top side of the assembled sandwich. Carefully flip the sandwich over and butter the other side, ensuring both outer surfaces are well-coated for optimal browning.
- Grill to Golden Perfection: Place the buttered sandwich carefully into the same pan you used earlier (now clean). Heat the pan to a low-medium temperature. This gentle heat is crucial to ensuring the bread browns slowly and evenly, allowing the cheese sufficient time to melt completely without burning the bread. If you have a lid that fits your pan, cover the sandwich. This creates a steamy environment that helps the cheese melt faster and more consistently, resulting in an incredibly gooey, irresistible center.
- Finish and Serve: Cook the sandwich for approximately 4-5 minutes on the first side, or until it achieves a beautiful deep golden-brown color and a satisfying crispness. Carefully flip the sandwich over using a spatula and cook for another 4-5 minutes on the second side, or until it matches the golden hue of the first side and the cheese within is fully melted and bubbling enticingly. Once perfectly grilled, remove the sandwich from the pan, slice it in half diagonally for an appealing presentation that’s easier to handle, and serve immediately. Enjoy the harmonious blend of spicy, savory, and cheesy goodness!

Pro Tips for a Perfect Grill:
For an extra crispy exterior and a perfectly melted interior, patience is key. Avoid the temptation to use high heat, as this will burn the bread before the cheese has a chance to fully melt. Gently pressing on the sandwich with a spatula during grilling can help ensure even contact with the pan and a consistent golden crust. Always keep an eye on the heat; if the bread starts browning too quickly, lower the temperature to prevent burning and achieve optimal results.
Customize Your Creation: Endless Possibilities
One of the best aspects of this grilled buffalo turkey sandwich recipe is its inherent flexibility. While the core recipe is fantastic as is, it also serves as an excellent canvas for personalization. Feel free to experiment with these substitutions and variations to tailor the sandwich to your taste, dietary preferences, or to simply utilize ingredients you already have on hand. The possibilities are truly limitless, allowing you to make this sandwich uniquely yours.
Cheese Choices: Melt into Deliciousness
The combination of sharp cheddar and creamy Monterey Jack cheese offers an ideal balance of robust flavor and incredible meltiness, which is why it’s highly recommended. However, your personal cheese preference is paramount! You can absolutely change the type of cheese to suit your palate or to try a new flavor profile:
- Provolone: Offers a mild, slightly nutty flavor and excellent melting properties, perfect for a less assertive cheese profile.
- Mozzarella: For a super stretchy, very mild option that will give you that classic, satisfying cheese pull.
- Pepper Jack: If you crave even more heat and a touch of creamy spice, Pepper Jack cheese will add another exciting layer of spice to your sandwich.
- Swiss: For a distinct, nutty, and subtly sweet flavor that pairs surprisingly well with turkey and savory sauces, offering a sophisticated twist.
- Colby Jack: A popular blended cheese that offers a milder flavor than sharp cheddar but still delivers a fantastic melt and creamy texture.
Bread Alternatives: The Foundation of Flavor
French bread provides a wonderful crisp texture and sturdy foundation, but this sandwich is equally delicious with other bread types. Choose based on your preference for crust, crumb, and ability to hold up to the rich filling:
- Sourdough Bread: Adds a delightful tangy note and a chewy texture that beautifully complements the rich, spicy filling.
- Texas Toast: Thicker slices mean more surface area for butter, resulting in an extra hearty, robustly crunchy sandwich.
- Brioche: For a richer, slightly sweeter, and more tender bread that creates a truly decadent and indulgent grilled sandwich.
- Ciabatta: Offers a chewy texture and an open crumb, ideal for absorbing all the delicious flavors and sauces within the sandwich.
- Rye Bread: For those who enjoy a distinct, savory flavor with a hint of caraway, providing a unique and robust base.
Ranch Dressing Alternatives: Creamy Companions
Ranch dressing adds a fantastic cooling, tangy dimension that truly balances the spicy buffalo turkey, making it an essential component for many. However, if ranch isn’t your favorite, or if you’re looking for different flavor profiles, here are some excellent alternatives:
- Omit Altogether: If you’re not a fan of creamy dressings or prefer a simpler, more direct flavor, you can simply skip it. Just ensure you lightly butter or spread a thin layer of mayonnaise on the inside of the bread to prevent dryness and add richness.
- Caesar Dressing: Offers a savory, garlicky, and umami-rich kick that works exceptionally well with turkey.
- Mayonnaise: A classic sandwich spread that adds simple richness and moisture without overpowering other flavors.
- Blue Cheese Dressing: For an even more authentic “buffalo” experience, as blue cheese is often paired with buffalo wings to temper the heat and add a pungent creaminess.
- Cream Cheese Spread: Whipped cream cheese, perhaps with a pinch of garlic powder and chives mixed in, could offer a unique creamy texture and mild tang.
Exciting Add-ins: Elevate Your Sandwich
Take your sandwich to the next level by incorporating additional ingredients for extra texture, flavor, and complexity:
- Crispy Bacon: A few slices of crispy, smoky bacon add a delightful salty crunch and umami depth.
- Pickled Red Onions: Offer a bright, tangy contrast to the rich and spicy flavors, cutting through the richness beautifully.
- Fresh Tomato Slices: Add a burst of freshness, juiciness, and a slight acidity, especially delicious when ripe.
- Avocado Slices: For a creamy, healthy fat that mellows the heat and adds a luxurious texture.
- Shredded Lettuce: If serving immediately, a thin layer of crisp lettuce adds a refreshing crunch and keeps things light.
- Caramelized Onions: A sweet and savory addition that deepens the flavor profile, adding a gourmet touch.
Feeding a Crowd: Scaling Up Your Sandwich Game
This grilled buffalo turkey sandwich is so universally appealing that you’ll undoubtedly find yourself wanting to share it, or simply make enough for delicious leftovers! The good news is that this recipe scales up beautifully, making it perfect for gatherings, family meals, or even meal prepping throughout the week. You won’t have to worry about compromising on flavor or quality when increasing the yield.
To feed more people, simply double or even triple the measurements outlined in the recipe. The key is to manage your cooking space efficiently. You can fry extra batches of buffalo-sauced turkey in butter ahead of time and keep it warm in a low oven or a slow cooker on the “warm” setting. For the grilling stage, consider using multiple pans simultaneously, or working in batches to ensure each sandwich achieves that perfect golden crust and melted cheese. A flat-top griddle or a large electric griddle would also be an excellent investment for batch cooking, allowing you to grill several sandwiches at once efficiently.
These sandwiches also make fantastic party appetizers. Once grilled and sliced in half, you can cut them into quarters to create delightful, bite-sized “party sandwiches” or sliders. Arranged beautifully on a platter, they’ll be a vibrant and flavorful addition to any spread, offering a comforting yet exciting option that’s sure to be a hit with guests. Their robust flavor holds up well, and the smaller size makes them easy to manage while mingling, making them an ideal choice for entertaining without extensive effort.

Serving Suggestions and Perfect Pairings
A grilled buffalo turkey sandwich is a hearty meal in itself, but it can be made even more enjoyable and well-rounded with the right accompaniments. For a classic diner-style experience, serve it alongside a generous helping of crispy french fries or sweet potato fries. The salty, crunchy potatoes provide an excellent textural contrast to the soft, gooey sandwich interior.
If you’re looking for something fresh and lighter, a side of creamy coleslaw or a crisp green salad with a light vinaigrette would offer a refreshing contrast to the sandwich’s richness and spice. The coolness of the salad will also help balance the heat from the buffalo sauce. For those who love to double down on the buffalo flavor, an extra side of ranch or blue cheese dressing for dipping is always a welcome and highly encouraged addition!
For a more substantial and comforting meal, consider pairing it with a warm bowl of creamy tomato soup – the ultimate companion to any grilled cheese variation. The tangy warmth of the soup beautifully complements the rich, savory sandwich. A simple side of potato chips also works perfectly for a quick and satisfying lunch, adding an effortless crunch. The versatility of this sandwich allows it to be enjoyed in many contexts, from a casual weeknight dinner to a star player at your next friendly get-together or tailgate party.
