Summer, with all its warmth and light, just makes everything better.

And what’s summer without its signature treats? While I absolutely adore the bounty of fresh berries and juicy stone fruits this season offers, my heart truly sings for ice cream. There’s something inherently nostalgic and comforting about a scoop of perfectly chilled ice cream on a warm day. Since I first stumbled upon the incredible no-churn method for making ice cream, my freezer is rarely without a homemade pint. Description

Your favorite flavor from the ice cream aisle, in an easy no-churn version! Add as many Rolos as you want to this easy no-churn Rolo ice cream recipe!


Ingredients

  • 2 cups heavy whipping cream
  • 1/2 cup cocoa powder
  • 1 300 mL can sweetened condensed milk
  • 1 cup mini Rolo pieces
  • 1/2 cup caramel sauce*

Instructions

  1. Pour the heavy whipping cream into the bowl of a stand mixer fitted with the whisk attachment and beat on high for 2-3 minutes, or until it visibly thickens. Add the cocoa powder, starting the mixer on low to gently incorporate the powder and prevent a mess, then increase to high speed and continue beating for another 2-3 minutes or until the mixture becomes thick and holds soft peaks, resembling whipped cream.
  2. Carefully remove the bowl from the mixer. Using a rubber spatula or a large wooden spoon, gently fold in the sweetened condensed milk until just combined. Be careful not to deflate the air you’ve incorporated. Next, fold in the Rolo pieces, distributing them evenly throughout the mixture.
  3. Transfer about half of the ice cream mixture into a standard-sized loaf pan (approximately 9×5 inches) or another freezer-safe container. Drizzle generously with half of the caramel sauce. Add the remaining ice cream mixture and top with the rest of the caramel sauce. You can use a knife or a skewer to gently swirl the caramel through the ice cream for a beautiful marbled effect. Freeze for a minimum of 5-6 hours, or until the ice cream is completely firm.

Once frozen, this delicious no-churn Rolo ice cream will stay fresh and creamy in an airtight container in the freezer for 1-2 weeks.
