It’s hard to believe how quickly time flies, isn’t it? One moment we’re enjoying the holidays, and the next, special occasions like Valentine’s Day are just around the corner. While major holidays can sometimes feel overwhelming, there’s a quiet joy in creating simple, heartwarming moments at home. This past weekend, my partner Etienne and I hosted a small dinner party. Despite an unexpected snowstorm that kept one couple from joining, the evening was filled with laughter, good company, and, of course, delicious food. We savored a fresh salad, a comforting spicy butternut squash soup, and truly fantastic beef short ribs with mushroom risotto, a recipe I highly recommend from Flavor the Moments.

But the real showstopper of the evening was a cake that I, rather daringly, improvised. It featured a rich chocolate cake base, layered with a luscious raspberry mousse filling, and enveloped in a generous, thick coating of chocolate ganache. The kind of dessert that makes you close your eyes and sigh with contentment! I genuinely regret not documenting that creation with a dedicated post. Rest assured, I plan to recreate and share it in due course.

After such an indulgent feast, my palate craved something wonderfully tart and refreshing. The solution? About four juicy grapefruits, enjoyed purely on their own. It was the perfect reset. However, my time out of the kitchen was short-lived, as the craving for more grapefruit goodness soon led me to bake these incredible Glazed Grapefruit Scones!

The Flavor Profile: Sweet or Tart Glazed Grapefruit Scones?

One common question about grapefruit in baking is whether the end result will be overly sour. For these grapefruit scones, I’ve struck a perfect balance. Thanks to the granulated sugar in the dough and the sweet, vibrant grapefruit glaze, these scones offer just the right amount of delightful zing without being overpoweringly tart. They possess a lovely sweetness that complements the citrus notes beautifully. If you prefer your scones a bit sweeter, you can easily adjust the recipe by adding an extra 2 tablespoons of sugar to the dough mixture. This subtle tweak will cater to those with a sweeter tooth while still allowing the natural grapefruit flavor to shine.

The beauty of using fresh grapefruit lies in its complex flavor. Unlike some other citrus fruits that can be one-dimensional, grapefruit brings a nuanced bitterness and a refreshing tang that pairs wonderfully with sweetness. When baked into a scone, this complexity creates an experience that is far more interesting than a simple lemon or orange scone. The glaze, infused with both grapefruit zest and juice, amplifies this unique character, creating a truly unforgettable breakfast or tea-time treat.

Crafting Perfect Grapefruit Scones: A Step-by-Step Guide

Making these grapefruit scones is a straightforward process, relying on fundamental scone-making principles to achieve that coveted flaky texture. The ingredient list includes classic scone components, ensuring a familiar and reliable baking experience:

  • Cold Butter: This is arguably the most crucial ingredient. Keeping the butter very cold, or even frozen, is essential for creating those delightful pockets of steam that result in a flaky scone.
  • Granulated Sugar: Provides sweetness and helps with browning.
  • All-Purpose Flour: The structural backbone of the scone.
  • Baking Powder and Baking Soda: Leavening agents that give the scones their rise and tender crumb.
  • Salt: Enhances all the other flavors.

Beyond these primary ingredients, the star of the show is, of course, fresh grapefruit. The recipe calls for the zest of one whole grapefruit, which carries the majority of the fruit’s aromatic oils and intense flavor. Additionally, real, fresh grapefruit juice is incorporated into the dough, providing both moisture and that signature tang. The dough itself comes together remarkably quickly. Adhering to the golden rules of scone making is key: ensure your butter is COLD, and avoid overworking the dough at all costs. Overmixing develops gluten, leading to tough scones rather than tender ones.

For an extra boost in flakiness, I highly recommend using frozen butter and grating it directly into your dry ingredients. This method creates tiny, evenly distributed shards of butter that melt slowly during baking, creating superior layers. If you have a food processor, it can perform this task in seconds, pulsing the cold butter with the dry ingredients until the mixture resembles coarse pea-sized crumbs. Once the liquid ingredients are added, mix gently with a spatula until just combined; the dough should be soft and shaggy, not smooth and elastic.

The glaze is the finishing touch, adding both visual appeal and an extra burst of grapefruit flavor. It’s a simple mixture of powdered sugar, fresh grapefruit juice, and even more grapefruit zest. This combination results in a beautifully zesty glaze that perfectly complements the scones, providing a sweet-tart finish that makes each bite irresistible.

Storage and Freshness: How Long Do Grapefruit Scones Last?

While these Glazed Grapefruit Scones are undeniably at their absolute best when enjoyed warm and fresh from the oven, their deliciousness doesn’t fade immediately. I’ve found them to be perfectly enjoyable over the next two to three days. To maintain their quality, store cooled scones in an airtight container at room temperature. This helps to keep them moist and prevents them from drying out.

For an optimal experience with leftover scones, I highly recommend a quick reheat. A few moments in the microwave or a short stint in a toaster oven can bring back some of that freshly baked warmth and tenderness. Adding a pat of butter to a reheated scone is also a simple pleasure that elevates the experience, making them feel almost as good as new. So, don’t hesitate to bake a full batch; you’ll be delighted to have these delicious treats on hand for a few days of delightful indulgence!

Next time you’re at the grocery store, do yourself a favor and pick up a few extra grapefruits. Not only are they fantastic for snacking, but they’re also a sensational ingredient for baking. You’ll be so glad you did when you’re savoring these exquisite scones!

Description

Take advantage of grapefruit season with these sweet, flaky glazed grapefruit scones! Looking for other uses for grapefruit? These citrus scones are it!

Ingredients

  • 2 cups all-purpose flour
  • 3 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup very cold unsalted butter*, grated or in cubes
  • 1/3 cup granulated sugar
  • 1 egg
  • 1/4 cup heavy cream
  • 1/3 cup fresh grapefruit juice
  • zest of 1 grapefruit

Glaze

  • 1 tbsp fresh grapefruit juice
  • 1 tbsp grapefruit zest
  • 1/2 cup powdered sugar

Instructions

  1. Preheat the oven to 400 F and line a large baking sheet with parchment paper or a silicone baking mat.
  2. In a medium sized bowl, whisk together the flour, baking powder, baking soda and salt. Cut in the cold butter using a fork or a pastry blender until the mixture resembles coarse pea-sized crumbs.
  3. In another mixing bowl, whisk the sugar together with the egg until combined, then add the heavy cream. Pour the liquid ingredients into the dry, and gently begin to combine together with a spatula. Add the grapefruit juice and zest, and use the spatula to mix gently until a soft dough is formed. Do not overmix!
  4. Transfer the dough to a lightly floured surface, and using floured hands, form the dough into an 8″ disc and cut into 8 wedges. Place each wedge on the prepared baking sheet a couple inches apart. Bake the scones for 18-20 minutes, until the scones are light brown around the edges. Allow the scones to cool for a few moments before adding the glaze.
  5. Make the glaze. While the scones are baking, prepare the glaze by combining the powdered sugar, grapefruit juice and zest. Add more juice or more sugar to achieve the consistency you’d like. Drizzle the glaze over the fresh scones before serving.

Scones are best enjoyed immediately, but will keep at room temperature in an airtight container for 2-3 days. I like to re-heat my leftover scones and add some butter 🙂

Notes

  1. I like to grate frozen butter into small pieces before adding it into the scone dough.
