Crafting the Ultimate Crispy Fish Burger: A Simple Guide
Creating a memorable crispy fish burger meal requires just a few straightforward ingredients and a bit of coordinated timing. The secret to a successful meal lies in starting with your oven-roasted potato wedges first, as they typically require a longer cooking time than the fish fillets. This ensures everything is ready to serve piping hot at the same time.
Essential Ingredients for Your Crispy Fish Burgers
Beyond the core components – the High Liner fish fillets, fresh potatoes, and soft burger buns – the magic truly happens with a selection of fresh and flavorful toppings. Our family’s preferred fixings include:
- Crisp slices of ripe tomatoes
- Tangy dill pickles
- Fresh, leafy lettuce (butter lettuce works wonderfully)
- Melted cheddar cheese slices for extra richness
These toppings add crucial texture and flavor contrasts, making each bite of your crispy fish burger an exciting culinary adventure. Feel free to customize with your family’s favorites, like red onion, coleslaw, or even a spicy jalapeño.
Perfectly Oven-Roasted Potato Wedges: Step-by-Step
Achieving perfectly tender on the inside, crispy on the outside potato wedges is easier than you think. Start by selecting firm potatoes, such as Russet or Yukon Gold, which hold their shape well and develop a lovely crust.
- Slice the Potatoes: Wash and scrub your potatoes thoroughly. To create uniform wedges, slice each potato once lengthwise. Then, take each half and slice it lengthwise again. Continue this process until you have approximately eight evenly sized wedges per potato. Consistency in size is key for even cooking.
-
Season for Flavor: Place your prepared potato wedges on a large baking sheet. Drizzle generously with olive oil, ensuring each wedge is lightly coated. Then, sprinkle with a flavorful seasoning mix. Our go-to blend includes:
- Garlic powder
- Onion powder
- Paprika (for color and subtle sweetness)
- Salt and freshly ground black pepper
Toss the potatoes directly on the baking sheet to distribute the oil and seasonings evenly.
- Initial Bake: Place the seasoned potato wedges in a preheated oven at 400°F (200°C) and bake for 15 minutes. This initial phase helps to tenderize the potatoes from the inside out.
Cooking the Crispy Fish Fillets and Finishing the Potatoes
After the initial potato bake, it’s time to introduce the High Liner English-style fillets to the party.
- Increase Oven Temperature & Flip Potatoes: Remove the baking sheet from the oven. Carefully flip the potato wedges to ensure even browning. Increase the oven temperature to 450°F (230°C).
- Add Fish Fillets: Move the partially cooked potatoes to one end of the baking sheet to make space. Place the frozen High Liner fish fillets on the other end.
- Final Bake: Return the baking sheet to the oven and bake for approximately 25 minutes, or as directed on the High Liner packaging. Make sure to flip the fish fillets halfway through the baking time to achieve maximum crispiness on both sides. Stir the potatoes once more at this point as well.
- Rest and Serve: Once golden and crispy, remove the fish and potatoes from the oven and let them rest for about 5 minutes. This allows the fish to firm up slightly and the potatoes to cool to a manageable temperature.
The Irresistible Lemon-Garlic Aioli: A Must-Have Dipping Sauce
While your fish and potatoes are baking to perfection, this is the ideal time to whip up the star condiment: the lemon-garlic aioli. This creamy, tangy, and aromatic sauce is not just a topping for your crispy fish burgers; it’s also the perfect dipping companion for your oven-roasted potato wedges. It’s incredibly simple to prepare and elevates the entire meal.
To make this sensational aioli, simply combine these ingredients in a small bowl:
- 1/2 cup mayonnaise (good quality makes a difference!)
- 1 tablespoon fresh lemon juice (key for that zesty kick)
- 1 clove garlic, minced (adds a pungent, savory depth)
- 1/4 teaspoon salt
- 1 tablespoon dried dill (for a subtle, herbaceous note that complements fish beautifully)
Whisk everything together until thoroughly combined and smooth. Taste and adjust seasonings if needed – perhaps a little more lemon juice for extra brightness or a pinch more salt. Set it aside until you’re ready to assemble your burgers.
Assembling Your Crispy Fish Burgers
With all components ready, it’s time for the grand finale – assembling your delicious crispy fish burgers!
- Bun Prep: Lightly toast your brioche-style burger buns if desired for extra texture. Spread a generous amount of the lemon-garlic aioli on both halves of each bun.
- Layering the Goodness: On the bottom half of the bun, place a fresh lettuce leaf. Follow with a slice of ripe tomato and a slice of cheddar cheese.
- Add the Fish: Carefully place one or two crispy High Liner fish fillets on top of the cheese. The warmth of the fish will slightly melt the cheese, creating a delightful gooey layer.
- Final Touches: Top the fish with a tangy pickle slice and complete your burger with the other half of the bun.
- Serve Immediately: Serve your crispy fish burgers right away, alongside the hot oven-roasted potato wedges and extra lemon-garlic aioli for dipping. The combination of warm, crispy, fresh, and creamy elements makes for an incredibly satisfying meal.
Beyond Potatoes: Alternative Side Dishes for Fish Burgers
While the oven-roasted potato wedges are an absolutely delicious pairing for these crispy fish burgers, their versatility means they’ll complement a variety of other sides beautifully. Here are a few additional favorites you might consider for a different twist:
- Easy Oven Roasted Potatoes: A simpler version of roasted potatoes for those really busy nights.
- Crispy Sweet Potato Fries: For a touch of sweetness and vibrant color, sweet potato fries are always a hit, especially with a creamy dill dip.
- Crunchy Ramen Noodle Salad: If you’re looking for a fresh, Asian-inspired crunch, this salad offers a wonderful contrast to the rich burger.
- Simple Green Salad: A light, crisp green salad with a vinaigrette dressing can provide a refreshing balance.
- Coleslaw: The creamy tang of a good coleslaw is a classic pairing with fish, offering both texture and flavor.
These crispy fish burgers are truly a gift on busy weeknights or for a relaxed weekend lunch. If your children are selective eaters, like mine often are, I bet they’ll have no reservations about devouring these tasty sandwiches. The mild fish flavor, combined with the crispy texture and the familiar burger format, makes it an approachable and enjoyable meal for even the pickiest palates.

Ingredients
Burgers
- 6 Family Favourites English-Style Fillets (High Liner Canada)
- 4 brioche-style burger buns
- 4 butter lettuce leaves
- 1 large tomato, sliced
- 4 slices cheddar cheese
- 4 pickle slices
Lemon-Garlic Aioli
- ½ cup mayo
- 1 tbsp fresh lemon juice
- 1 tbsp dried dill
- ¼ tsp salt
- 1 clove garlic, minced
Oven-Roasted Potato Wedges
- 4 potatoes (Russet or Yukon Gold recommended)
- 2 tbsp olive oil
- 1 tsp garlic powder
- ¼ tsp onion powder
- 1 tsp salt
- ½ tsp paprika
- ¼ tsp ground pepper
Instructions
- Preheat the oven to 400°F (200°C) and prepare a large baking tray. Wash potatoes and slice each potato lengthwise, then again, until you have approximately 8-12 wedges of roughly the same size per potato. Place the potatoes in a large bowl.
- In a small dish, combine the olive oil, garlic powder, onion powder, salt, paprika, and ground pepper. Drizzle this olive oil mixture all over the potatoes, stirring well to ensure each wedge is coated. Arrange the seasoned potatoes on the baking sheet in a single layer and place in the preheated oven for 15 minutes.
- After 15 minutes, remove the baking sheet, give the potatoes a good stir to flip them, and increase the oven temperature to 450°F (230°C). Create space on the baking sheet for the frozen High Liner fish fillets. Place the fillets next to the potatoes and return the tray to the oven. Bake for approximately 25 minutes, or according to package directions. Halfway through the baking time, remove the tray to flip the fish fillets for even crispiness and stir the potatoes one more time. Remove the tray from the oven and let the fish and potatoes cool for 5 minutes before serving.
- While the fish and potatoes are cooking, prepare the lemon-garlic aioli. In a small bowl, mix together the mayonnaise, fresh lemon juice, minced garlic, dried dill, and salt until smooth and well combined.
- To assemble the crispy fish burgers: spread a generous amount of the prepared lemon-garlic aioli on both halves of each burger bun. On the bottom bun, layer a lettuce leaf, followed by a tomato slice and a slice of cheddar cheese. Place 1-2 baked fish fillets on top of the cheese, then add a pickle slice. Top with the other burger bun half. Serve immediately, accompanied by the oven-roasted potato wedges and additional lemon-garlic aioli for dipping.
Leftovers can be stored unassembled in the fridge. Reheat fish fillets in the microwave or oven until warm and crispy before assembling the burgers again.
