The best use for leftover turkey! This easy turkey cranberry sandwich is buttery delicious and a great lunch or dinner after the holidays!
Ingredients
- 2 slices sourdough bread
- 2 tbsp mayonnaise
- 2 tbsp cranberry sauce
- 2 slices provolone cheese
- 100 grams oven roasted turkey breast
- 1 tbsp chopped walnuts
- 2 tbsp unsalted butter, room temperature
Instructions
- On a large cutting board, place both slices of bread down and spread the mayonnaise across one side of both slices of bread. Next, on one piece of bread, spread the cranberry sauce, then add the cheese slices.
- Place the oven roasted turkey breast in a single layer on top of the cheese, then sprinkle the chopped walnuts on top. Place the other piece of bread, mayo side down, on top of the walnuts to complete the sandwich.
- Heat a non-stick frying pan over medium heat. Spread 1 tbsp of softened butter on the top side of the assembled sandwich, then carefully place the buttered side down on to the hot pan. Use the remaining butter to butter the now-exposed top side of the sandwich.
- Place a lid on the frying pan and turn the heat to low. Cook the sandwich for 4-5 minutes on one side, or until golden brown, before carefully flipping the sandwich. Cook it on the other side for another 4-5 minutes or until the cheese has melted and is delightfully gooey. Remove the sandwich to a plate and enjoy immediately!
