Description

Sunshine in the form of a sweet, creamy citrus tart with a super simple grain-free crust and rich, dreamy lemon filling. This Greek yogurt dessert is gluten-free and grain-free and you can even make it low-carb!


Ingredients

  • 1 1/2 cups almond flour
  • 1/3 cup coconut oil, melted*
  • 2 tbsp honey (or agave)
  • 1/4 tsp salt

Filling

  • 8 oz full-fat cream cheese, softened
  • 1 cup plain, full-fat Greek yogurt**
  •  1/2 lemon, juice and zest
  • 1/4 cup honey (or agave)
  • Sliced citrus, berries for topping (optional)

Instructions

  1. Preheat the oven to 350 F (175 C) and lightly grease a 14 x 5″ tart pan***. In a medium mixing bowl, combine the almond flour, melted coconut oil, honey, and salt. Use a fork to thoroughly mix the ingredients until a soft, uniform dough forms. Press the dough evenly into the prepared tart pan, ensuring it’s firmly compacted across the bottom and up the sides. Bake the crust for 10 minutes, or until the edges are lightly golden brown. Remove from the oven and allow it to cool completely on a wire rack.
  2. While the crust cools, prepare the luscious filling. In the bowl of a stand mixer fitted with the paddle attachment (or using an electric hand mixer), beat the softened full-fat cream cheese and full-fat Greek yogurt on medium-high speed for approximately 2 minutes, until smooth and well combined. Next, add the fresh lemon juice, lemon zest, and honey. Continue mixing until all ingredients are thoroughly incorporated and the filling is silky smooth. Carefully pour the prepared filling into the cooled tart crust, spreading it out evenly with a spatula. Chill the tart in the refrigerator for a minimum of 3-4 hours, or ideally overnight, to allow the filling to set properly. *For the crust, it’s crucial to use coconut oil or melted butter. Other liquid oils will not provide the necessary structure, resulting in a softer crust.

**I recommend using plain full-fat Greek yogurt for the best texture and flavor. However, for a delightful twist, you could experiment with coconut yogurt or even a lemon-flavored Greek yogurt!

***While a 14″ x 5″ rectangular tart pan is ideal, this recipe can also be successfully made in a standard round 9″ tart pan. Adjust baking time slightly if needed.
