Life can be wonderfully unpredictable, can’t it? Just this past weekend, we celebrated Hattie’s first birthday – how time flies when you’re watching a little one grow! It felt like just yesterday she was a newborn, and now she’s a sweet, smiley one-year-old, completing our family in the most perfect way. Her special day was wonderfully low-key, just right for a one-year-old who might not quite grasp the concept of birthdays yet. We enjoyed some family hot-tubbing, a peaceful walk, and a cozy dinner with Etienne’s parents. And yes, Hattie’s smash cake on Instagram turned out perfectly – a sweet success!
Speaking of unpredictable, we had a surprise snowstorm. I had braced myself for it earlier, but it decided to hold off until after dinner. Then, it arrived with a vengeance – a massive snowfall! Thankfully, much of it has already melted, but it did provide some fantastic entertainment for the boys on Sunday morning. These moments of family joy and unexpected weather shifts remind me how important it is to have simple, wholesome meals that are both comforting and energizing. And that’s exactly what this incredible cabbage salad offers.

Why This Cabbage Salad is a Healthy Choice
Let’s shine a spotlight on cabbage, a truly underrated vegetable. Over the past few months, I’ve made an effort to incorporate more cabbage into my diet, and I honestly wonder why it took me so long to rediscover its magic! It’s incredibly inexpensive, offers a satisfying crunch, and is remarkably versatile. Beyond its culinary appeal, cabbage is a nutritional powerhouse. It’s exceptionally low in calories yet bursting with essential nutrients like fiber and vitamin C, supporting digestive health and boosting immunity. Furthermore, its ultra-low-carb content makes it an ideal staple for anyone adhering to a keto or low-carb diet, allowing you to enjoy a filling and flavorful meal without derailing your health goals.
Growing up, my Mom often prepared a simple yet delicious carrot and cabbage salad with an oil and vinegar dressing. It was a constant on our dinner table, and for some reason, I never quite replicated it after moving out. It truly is a fantastic side dish. I initially thought about sharing her classic recipe, and I still might one day, but my attempt to recreate it recently evolved into something even more substantial and satisfying – this hearty cabbage salad that practically eats like a meal on its own! You might feel a bit like a rabbit crunching away, but it’s incredibly filling and leaves you feeling completely satisfied. For an added protein boost, consider tossing in some grilled chicken or shrimp, transforming it into a complete and balanced meal.
This particular rendition features a colorful blend of green and red cabbage, fresh carrots, crisp red bell pepper, crunchy roasted cashews, aromatic sesame seeds, and fresh cilantro. Instead of a traditional vinaigrette, I opted for a creamy dressing that perfectly complements the salad’s textures and flavors. What makes this dressing even better is its healthy twist: it uses plain Greek yogurt and a touch of honey, offering a rich creaminess without relying on heavy mayonnaise. This thoughtful combination not only enhances the taste but also adds an extra layer of beneficial probiotics and a natural sweetness.

Crafting the Perfect Creamy Cashew Dressing
The dressing is the heart of this salad, bringing all the flavors together in a harmonious blend. It’s an easy-to-make concoction that perfectly balances tang, sweetness, and umami. Here’s a closer look at the star components:
- Fresh Lime Juice: Provides a bright, zesty kick that cuts through the richness and enhances the freshness of the vegetables.
- Minced Fresh Ginger: Adds a warm, spicy, and fragrant note, known for its digestive benefits and ability to awaken the palate.
- Minced Garlic: Essential for depth of flavor, garlic offers a pungent aroma and numerous health properties.
- Soy Sauce: Contributes a savory, umami richness. For a gluten-free option, use tamari.
- Sesame Oil: Infuses the dressing with a distinct nutty aroma and flavor, characteristic of many Asian-inspired dishes.
- Honey: A touch of natural sweetness to balance the tartness of the lime and the sharpness of the ginger and garlic. If you’re strictly keto, you can swap this for a sugar-free sweetener like erythritol or monk fruit syrup.
- Plain Greek Yogurt: The secret to the dressing’s creamy texture and healthy profile. It’s packed with protein and probiotics, offering a lighter alternative to mayonnaise while delivering a wonderfully smooth consistency.
Feel free to experiment with these ingredients to suit your personal preferences. If you’re not a fan of certain components like cilantro or cashews, they can easily be swapped out for alternatives like toasted almonds, walnuts, or fresh parsley. The beauty of this salad lies in its adaptability!
Customizing Your Keto Cabbage Salad
While this recipe is fantastic as written, it’s also a canvas for culinary creativity. Don’t hesitate to make it your own!
- Add More Vegetables: Beyond cabbage and carrots, consider adding thinly sliced cucumber, finely chopped broccoli florets, shredded Brussels sprouts, or even some edamame for extra texture and nutrition.
- Boost the Protein: As mentioned, grilled chicken or shrimp are excellent additions. Other great options include crispy baked tofu, tempeh, hard-boiled eggs (as I discovered, they’re a perfect pairing!), or even a can of drained and rinsed chickpeas for a vegetarian protein boost (though be mindful of carb count if strictly keto).
- Vary the Nuts/Seeds: If cashews aren’t your preference, try toasted almonds, pecans, sunflower seeds, or pumpkin seeds. Each offers a unique flavor and crunch.
- Spice It Up: A pinch of red pepper flakes in the dressing or sprinkled over the salad can add a pleasant heat. A dash of sriracha or a few drops of hot sauce can also elevate the flavor profile.
- Herbs: While cilantro is wonderful, fresh mint or green onions can offer a refreshing twist.

Serving Suggestions & Storage Tips
This crunchy, colorful Keto Cabbage Salad is truly versatile. We often enjoy it as a satisfying lunch all on its own, especially on warmer days. However, it also makes a fantastic accompaniment to a variety of main courses. Think grilled salmon, baked chicken, pan-seared pork chops, or even alongside a lean steak. Its refreshing crunch and creamy dressing provide a perfect contrast to richer, cooked proteins. And since summer might still be a while away for some of us, I can confirm it’s just as delightful for brightening up a cold, grey day!
Storage: Leftovers of this salad can be kept in an airtight container in the refrigerator for 3-4 days. The cabbage holds up remarkably well to the dressing, maintaining its crunch without becoming soggy too quickly. In fact, the flavors often deepen and meld beautifully after a few hours or overnight in the fridge, making it an excellent make-ahead option for meal prep!
