The Irresistible Flavor Profile of Pecan Coconut Granola

If the divine combination of coconut and chocolate appeals to your taste buds, then prepare to fall in love with this pecan coconut granola. Each ingredient plays a crucial role in creating a symphony of textures and flavors. The unsweetened coconut flakes provide a rich, tropical essence and a satisfying chew, while the coconut oil not only aids in crisping but also intensifies that delightful coconut flavor profile. When combined with golden honey, the coconut oil acts as a natural binder, ensuring that your granola bakes into those coveted, chunky clusters everyone loves.

The addition of pecans is absolutely inspired. Their naturally buttery, slightly earthy flavor and tender crunch perfectly complement the sweetness of the coconut and the robust richness of the chocolate. These elements aren’t just thrown together; they harmonize beautifully, creating a granola that feels both comforting and exotic. The gentle sweetness of honey perfectly balances the darker notes of the chocolate, ensuring every bite is a delightful experience.

Key Ingredients for Your Homemade Pecan Coconut Granola

Crafting this incredible granola requires a straightforward list of wholesome ingredients, most of which are probably already in your kitchen. For the best results and that signature flavor, you’ll need:

  • Rolled Oats: The foundation of any great granola, providing essential fiber and a hearty base.
  • Unsweetened Coconut Flakes: Large flakes offer the best texture and full coconut flavor without added sugar.
  • Chopped Pecans: For their rich, buttery taste and satisfying crunch. Feel free to substitute with walnuts or almonds if preferred.
  • Pepitas (Pumpkin Seeds): Adds a subtle earthy flavor and an extra layer of crunch and nutrition.
  • Coconut Oil: Key for binding, crisping, and enhancing the coconut essence.
  • Honey: A natural sweetener and crucial binder for those desirable clusters. Maple syrup can be a good alternative for a slightly different flavor.
  • Vanilla Extract: A touch of pure vanilla elevates all the other flavors.
  • Dark or Semi-Sweet Chocolate: Chopped into chunks or chips, it melts into glorious pockets of chocolatey goodness.

For those looking to boost the nutritional profile, consider stirring in a couple of tablespoons of ground flaxseed or hemp hearts with the dry ingredients. These additions blend seamlessly into the granola without altering the taste significantly but add a fantastic dose of omega-3s and extra fiber. Don’t hesitate to get creative with other mix-ins too! Sunflower seeds, dried cranberries, or even a sprinkle of cinnamon can add wonderful variations to this already fantastic base recipe. The possibilities are endless when you make it yourself!

Simple Steps to Perfect Coconut Granola

One of the best aspects of this homemade granola is how incredibly simple and hands-off the baking process is. You can easily have a batch of this deliciousness ready in under an hour, with most of that time being passive baking. It’s perfect for a weekend morning project or even a quick weekday prep session.

  1. Prepare Your Dry Ingredients: In a large mixing bowl, combine the rolled oats, unsweetened coconut flakes, chopped pecans, and pepitas. Ensure they are well mixed to distribute all the flavors evenly.
  2. Whisk the Wet Ingredients: In a separate, microwave-safe bowl, gently melt the coconut oil. This can be done in 30-second intervals in the microwave until fully liquid. Once melted, whisk in the honey until thoroughly combined. Finally, stir in the pure vanilla extract. The combination of coconut oil and honey is key to creating those beautiful, crunchy clusters.
  3. Combine and Coat: Pour the wet mixture over the dry ingredients in the large bowl. Using a sturdy spoon or your hands, mix everything together until all the oats, nuts, and seeds are evenly coated with the honey and oil mixture. This ensures consistent browning and flavor in every bite.
  4. Bake to Perfection: Spread the coated granola mixture evenly across a large baking sheet lined with parchment paper or a silicone baking mat. A single, thin layer is ideal for even baking and maximum crispiness. Bake in a preheated oven at 300°F (150°C) for approximately 40 minutes. Remember to stir the granola every 15 minutes or so to prevent burning and promote uniform golden-brown deliciousness.
  5. Add the Chocolate: Once the granola is golden brown and wonderfully fragrant, remove it from the oven. Allow it to cool on the baking sheet for about 15-20 minutes. While still warm but not scorching hot, sprinkle in the chopped dark or semi-sweet chocolate. Stir gently to combine. The residual heat from the granola will slightly melt the chocolate, creating delightful, gooey pockets and clusters.

For best results, allow the granola to cool completely on the baking sheet before transferring it. This cooling period is crucial for the granola to fully crisp up and for the clusters to set. Once cooled, store your homemade pecan coconut granola in an airtight container at room temperature. It will stay fresh and crunchy for up to two weeks – if it lasts that long!

Granola Success Tips

  • For Epic Chocolate Clusters: If you adore big, melted chocolate chunks, add the chopped chocolate to the granola immediately after removing the tray from the oven. Stir gently; the heat will perfectly melt the chocolate, creating luscious, rich clusters as it cools.
  • Patience for Crunch: Don’t be alarmed if your granola feels a bit soft when it first comes out of the oven. It will firm up and become wonderfully crunchy as it cools completely. Resist the urge to snack too soon for maximum crispness!

Description

Coconut marries chocolate to create big crunchy clusters in this pecan coconut granola! Perfect for breakfast, dessert or any time!

Ingredients

Scale
  • 3 cups old-fashioned rolled oats
  • 3/4 cup large unsweetened coconut flakes
  • 1 cup chopped pecans, or other nut of choice
  • 1/4 cup pepitas
  • 1/3 cup coconut oil
  • 1/3 cup honey*
  • 1 tsp pure vanilla extract
  • 4 oz chopped dark, unsweetened chocolate

Instructions

  1. Preheat oven to 300 degrees F (150 C) and line a large baking sheet with parchment paper or a silicone baking mat. Set aside.
  2. In a large bowl, mix together the oats, coconut, pecans, and pepitas. In another large microwaveable bowl, add coconut oil and honey and heat in 30-second increments until the oil is melted and fully combined with the honey. Stir in the vanilla extract to the oil and honey mixture.
  3. Add the wet ingredients to the dry mixture and toss to coat evenly. Spread the granola mixture evenly onto the prepared baking sheet and place in the oven for 40 minutes, or until golden brown. Stir the mixture every 15 minutes to ensure even baking.
  4. Immediately after the granola comes out of the oven,** add the chocolate chunks and, using a large wooden spoon, stir to combine until the chocolate is almost melted. Allow the granola to cool completely on the baking sheet; it will get much crunchier as it cools down.

Store in an airtight container at room temperature for up to 2 weeks (if it lasts that long)!

Notes

* You may substitute agave syrup for the honey; use 1/4 cup plus 2 tbsp.

**You may also wait until the granola cools completely before adding the chocolate to the mixture. I personally prefer the larger, slightly melted chunks that adding it while warm creates, but this is entirely a matter of personal preference.
