This humble cruciferous vegetable is a true chameleon in the kitchen, effortlessly adapting to a myriad of cooking styles and flavor profiles. In this recipe, cauliflower shines as the star, delivering a satisfying ‘meaty’ texture that’s surprisingly fulfilling, making these wraps a standout among vegetarian cauliflower recipes. Beyond its incredible versatility, cauliflower is packed with nutrients, including Vitamin C, Vitamin K, and fiber, making it a fantastic choice for a healthy and balanced diet. Its ability to absorb bold flavors makes it the perfect canvas for our spicy Thai sauce, ensuring every bite of these Thai cauliflower lettuce wraps is packed with taste.
My profound love affair with Thai cuisine is well-documented, and if you share that passion, you are in for an absolute treat with these wraps. Thai food, with its intricate balance of sweet, sour, salty, and spicy notes, creates an unparalleled dining experience that truly awakens the senses. From the fragrant lemongrass to the fiery chilies and the rich coconut milk, every ingredient plays a vital role in crafting a harmonious dish. It’s a cuisine that consistently delights and surprises, and if I had to pick one cuisine to enjoy for the rest of my life, Thai would undoubtedly be at the top of my list. We truly need a dedicated Thai category on this blog to celebrate its culinary brilliance, showcasing everything from a comforting Thai Green Chicken Curry to a vibrant Penang Prawn Curry, and, of course, these irresistible Thai Cauliflower Lettuce Wraps. You’ll understand why it’s my favorite when you taste the incredible depth of flavor in this dish!
These Thai cauliflower lettuce wraps boast just the right amount of heat, coupled with an explosion of flavor. They are highly customizable with an array of fresh toppings, and the star of the show – our irresistible peanut sauce – perfectly complements the subtle spice. Let’s delve a little deeper into this remarkable peanut sauce, shall we? It’s incredibly easy to make with only 5 ingredients, yet it delivers a profound taste experience!

My general obsession with peanut butter extends to its delightful contrast with savory dishes, especially those with a subtle kick of spice! The rich, creamy texture and sweet-savory profile of peanut butter beautifully balance any heat, creating a more complex and satisfying flavor. It’s that same delightful combination you find in dishes like classic chicken satay, where the nutty sauce elevates the entire experience. This particular peanut dressing captures that essence perfectly, making it an essential component of these vegetarian Thai cauliflower wraps.
How to Achieve Perfectly Crispy Cauliflower for Vegetarian Thai Lettuce Wraps
The secret to these truly exceptional vegetarian Thai lettuce wraps lies in the incredibly crispy cauliflower. If you’ve ever tried my Crispy Mongolian Cauliflower, you’ll be familiar with the simple yet highly effective technique we employ here. It all comes down to one pantry staple: cornstarch! This miraculous ingredient creates an incredibly light and crunchy exterior on the cauliflower florets when roasted, transforming them from soft to satisfyingly crisp. The process is straightforward: simply toss the cauliflower florets in a large re-sealable bag with a touch of oil and cornstarch, ensuring each piece is thoroughly coated. Make sure not to overcrowd your baking sheet; spread the cauliflower evenly in a single layer to allow for proper air circulation, which is key to achieving that desirable crispiness. Then, roast them in a hot oven until they are beautifully golden brown and boast an irresistible crunch. This method not only enhances the texture but also locks in the cauliflower’s natural sweetness, making it an unforgettable component of these Thai cauliflower tacos.
While cornstarch is highly recommended for that optimal crispiness that makes these cauliflower wraps so addictive, you can certainly bake the cauliflower with just a bit of olive oil for a delicious result. However, for that extra layer of crunch and a truly authentic “crispy cauliflower” experience, the cornstarch method is unmatched. Experiment and discover your preferred level of crispiness! And speaking of delightful textures, have you ever indulged in crispy pork belly? Sooooooo good! While that’s a story for another day, today, we’re keeping things wonderfully meatless and plant-forward with these amazing wraps.

Choosing the Best Lettuce for Your Lettuce Wraps
Choosing the right vessel for your filling is crucial for any successful lettuce wrap, and these vegetarian Thai lettuce wraps are no exception. While many recipes often recommend butter lettuce for its pliable, tender leaves that naturally form a perfect ‘cup,’ I personally prefer a wrap with a bit more structural integrity and a satisfying crunch – both for beautiful presentation and to ensure I can generously load up on that delicious filling! For this recipe, I’ve discovered the ultimate combination: a crisp leaf of iceberg lettuce carefully nested within a butter lettuce leaf. This clever layering provides the best of both worlds – the refreshing crunch and robust support of iceberg, beautifully complemented by the tender, cup-like shape of butter lettuce. The result is a substantial, fresh, and incredibly satisfying wrap that can handle all the flavorful cauliflower and vibrant veggie goodness without tearing or becoming soggy.
Furthermore, an important tip for preparing your lettuce leaves: after you rinse them thoroughly, it’s absolutely vital to dry them off really well. Excess water can make your wraps limp, dilute the vibrant flavors of your filling and sauce, and detract from the overall crispness of the experience. Use a salad spinner or gently pat them dry with paper towels until they are completely moisture-free before assembling. This simple step ensures every bite of your Thai cauliflower lettuce wrap is a delightful explosion of crispness and flavor, making for a truly enjoyable and mess-free eating experience.

Even the most committed carnivores in your life, like my partner Etienne who occasionally expresses a ‘wee bit’ of complaint about my meatless meals, will be utterly won over by these Thai Cauliflower Lettuce Wraps! This dish is a testament to how incredibly flavorful, satisfying, and exciting vegetarian cuisine can be. It’s a fantastic option for a Meatless Monday, a light yet fulfilling weeknight dinner, or even a fun, interactive meal for entertaining guests. The harmonious combination of crispy cauliflower, fresh, vibrant vegetables, and that irresistible spicy-sweet peanut sauce creates a dish that’s universally appealing and undeniably delicious.
As we anticipate the arrival of warmer weather and brighter, longer days, these refreshing and flavorful wraps offer a perfect taste of spring, regardless of what the forecast outside might be. They are a wonderful way to bring fresh, vibrant energy into your kitchen and onto your plate. We’re certainly hoping for some lovely outdoor weather soon, as the kids (and I!) are getting a serious case of cabin fever. Come on, spring!

Description
Discover these delightful vegetarian Thai cauliflower lettuce wraps – essentially flavorful cauliflower tacos! Featuring crispy, crunchy cauliflower florets coated in a mildly spicy Thai sauce, combined with an assortment of fresh, vibrant vegetables, all nestled in crisp lettuce cups. A healthy and incredibly satisfying plant-based meal that’s bursting with exotic flavors.
Ingredients
Scale
- 6 cups cauliflower florets (approx. 1 head)
- 5 tbsp oil, divided (olive oil, vegetable or grapeseed)
- 1/2 cup corn starch
- 1 tbsp grated ginger
- 4 garlic cloves, minced
- 2 tbsp red curry paste*
- 3 tbsp hoisin sauce
- 3–4 mushrooms, diced
- 1 red bell pepper, sliced into thin strips
- 1–2 carrots, julienned
- 1 head butter lettuce
- 1 head iceberg lettuce
- 1/4 cup green onions, diced
- sesame seeds, cilantro, peanuts for garnish (optional)
Peanut Dressing
- 1/4 cup smooth, natural peanut butter*
- 1 tbsp soy sauce (or gluten-free tamari)
- 1 tbsp honey
- 1/2 tsp chili sauce
- 1 tbsp fresh lime juice
- 3 tbsp water*
Instructions
- Preheat the oven to 425 F and line a large baking sheet with parchment paper or a silicone baking mat.
- Combine the cauliflower florets, 3 tbsp of oil and cornstarch in a large re-sealable bag and shake to coat thoroughly. Spread the cauliflower onto the baking sheet in a single layer to ensure maximum crispiness, and bake for 20-25 minutes or until lightly browned and wonderfully crisp.
- While the cauliflower is baking, prepare the tantalizing peanut sauce. In a small bowl, whisk together all of the dressing ingredients until smooth. Add more water, one teaspoon at a time, if necessary to achieve a thin, runny consistency perfect for drizzling. Taste and adjust seasonings as desired for your preferred balance of sweet, salty, and spicy.
- Prepare the remaining filling ingredients. Heat the remaining 2 tbsp oil in a large pan or wok over medium heat. Once the oil is shimmering, add the grated ginger and minced garlic cloves, sautéing for 2-3 minutes until incredibly fragrant. Stir in the red curry paste and hoisin sauce, mixing well to combine and develop the flavors. Add the diced mushrooms and sliced red bell pepper and cook for another 2-3 minutes until slightly softened but still retaining a bite. Reduce the heat to low.
- Carefully remove the crispy cauliflower from the oven and add it directly into the pan with the sautéed vegetables, along with the julienned carrots. Stir everything together until the cauliflower and carrots are thoroughly coated in the flavorful Thai sauce. Remove the pan from heat immediately to preserve the cauliflower’s crispiness.
- Assemble your vibrant lettuce wraps. Start by placing one butter lettuce leaf inside a larger, crisp leaf of iceberg lettuce to create a sturdy cup. Fill each lettuce cup with about 1/2 cup of the warm, flavorful cauliflower and veggie filling. Garnish generously with freshly diced green onions, a sprinkle of sesame seeds, fresh cilantro, and chopped peanuts for an extra layer of crunch and flavor. Drizzle generously with the prepared peanut sauce just before serving. Serve immediately and enjoy the explosion of flavors and textures!
For best results, lettuce wraps should be prepared as they are eaten to maintain freshness and crispness. Any leftover filling can be stored in an airtight container in the fridge for 1-2 days. Store remaining peanut sauce at room temperature or in the fridge for 3-4 days; if refrigerated, you may need to whisk in a little more water to restore its drizzly consistency before serving.
Notes
- For an authentic Thai flavor, I highly recommend using this brand of red Thai curry paste. Its rich, complex flavor forms the perfect base for our sauce.
- While any smooth peanut butter will work for the dressing, I always opt for natural peanut butter for a cleaner flavor profile and less added sugar.
- The consistency of the peanut sauce is key for drizzling. It should be runny enough to flow easily over your wraps. If too thick, simply add more water, one teaspoon at a time, whisking until it reaches your desired drizzly consistency.
