  • 3/4 cup jasmine rice
  • 2 green onions, thinly sliced
  • 1/3 cup sugar snap peas, trimmed
  • 1 cup diced fresh pineapple (1/2-inch pieces)
  • 2 tbsp soy sauce (or tamari for gluten-free)
  • 2 tbsp hoisin sauce
  • 1/2 tbsp cornstarch
  • 2 tbsp sweet chili sauce
  • 1 lb chicken tenders, patted dry
  • 1 tbsp olive oil
  • 2 tbsp cashews
  • 1 tbsp sesame oil
  • 1/4 cup red onion, diced
  • Salt and freshly ground black pepper, to taste

Meanwhile, arrange chicken tenders on a foil-lined baking sheet, toss with 1 tbsp olive oil, and season with salt and pepper. Broil in the middle of the oven for 8-10 minutes, or until cooked through (internal temperature 165°F/74°C).
  2. Slice & Whisk: While rice and chicken cook, thinly slice green onions and trim sugar snap peas. Cut pineapple into 1/2-inch pieces. In a medium bowl, whisk together the soy sauce, hoisin sauce, cornstarch, and sweet chili sauce. Set aside.
