The real challenge often isn’t a lack of ideas, but rather the difficulty of recalling those fantastic recipes when it’s time to actually plan a meal. My “meal planning” often involves a last-minute dash to the fridge at 2 PM to assess my produce, followed by a frantic thawing of meat. And, of course, the inevitable 4 PM grocery store trip, navigating the aisles with three energetic kids in tow.

Admittedly, there are those rare, triumphant Sunday evenings when I meticulously map out an entire week’s worth of dinners. However, these instances are truly the exception, not the rule. More often than not, the weeknights demand something quick, satisfying, and utterly delicious – a meal that feels like a culinary accomplishment without the exhaustive effort. And that, my friends, is where the magnificent Instant Pot beef barbacoa steps in to save the day!

My Instant Pot has truly become an indispensable kitchen appliance. It took me quite some time to finally invest in one, but once I did, I couldn’t believe I had waited so long! When I toss those substantial chunks of stewing beef into the Instant Pot, they consistently come out so tender that they literally fall apart with minimal effort. This ability to consistently produce fall-apart tender beef is precisely why I adore my Instant Pot for recipes like barbacoa. A little while ago, I was fortunate to receive a selection of excellent beers from Citizen Brewery, located right here in Calgary. My immediate thought was to incorporate one of these flavorful brews into a savory dish. My mind initially went to my popular Crockpot Italian Beef Sandwich recipe, which already utilizes beer to add incredible depth to its rich juices. While an Instant Pot version of that recipe is definitely still on my to-do list, a more exciting idea soon sparked: BEEF BARBACOA TACOS!

The pressure cooking function perfectly mimics the steaming environment of traditional barbacoa, drastically reducing cooking time while still achieving that coveted fall-apart tender texture. Incorporating beer into the cooking liquid adds another layer of complexity and savory depth, making this Instant Pot barbacoa even more delicious and authentic-tasting.

How Do You Make Barbacoa Beef in the Instant Pot?

Get ready, because making barbacoa beef in the Instant Pot is astonishingly easy – even for those of us who tend to plan dinner at the last minute! The process is streamlined, efficient, and delivers mouth-watering results every time. You’ll need a 2-3 pound chuck roast or bottom blade roast, both excellent choices for their marbling and tenderness when slow-cooked or pressure cooked. Start by cutting your chosen roast into large, manageable chunks. This helps with even browning and allows the flavors to penetrate the meat more effectively.

Next, the magic begins in the Instant Pot. Utilize its sauté function to brown the beef chunks on all sides. This crucial step develops a rich, savory crust that adds immense flavor to the final dish. After browning, you’ll add aromatic spices such as cumin, chili powder, and oregano, along with fresh minced garlic, creating the signature barbacoa flavor base. Then comes the liquid: a splash of fresh lime juice for brightness, a robust beer (like a pale ale, which complements the beef beautifully), and low-sodium beef broth.   • Boost the Spice and Texture: For an extra kick and a more complex texture, stir in about 1/2 cup of your favorite prepared salsa at the very end of the cooking process, after the meat has been shredded.
  • Thicker, Richer Sauce: If you prefer a thicker, more luscious sauce to coat your barbacoa, simply create a cornstarch slurry. Whisk together 1 tablespoon of cornstarch with 1 tablespoon of cold water until smooth. With the Instant Pot on sauté mode, stir this slurry into the cooking liquid (before adding the shredded meat back in) and let it simmer for a minute or two until thickened.

Description

An easy barbacoa recipe that’s all done in the Instant Pot! Try it tonight for the softest, juiciest, most flavourful instant pot shredded beef tacos!


Ingredients

  • 23 lb chuck or bottom blade roast
  • 1 tbsp oil
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp oregano
  • juice of 1 lime
  • 1/2 cup Citizen Brewery beer*
  • 1/2 cup low-sodium beef broth
  • optional: 1/2 cup prepared salsa, 1 tin diced green chilies
  • 6 small flour tortillas
  • shredded lettuce, shredded carrots, sliced radishes, sour cream, salsa and lime juice for serving

Instructions

  1. About 30 minutes to an hour before cooking, take your roast out of the fridge to allow it to come to room temperature, and cut it into large chunks.
  2. Turn the Instant Pot to sauté on medium and heat the oil. Add the meat, and brown on all sides, stirring occasionally with a wooden spoon. Add the minced garlic, cumin, chili powder, and oregano. Stir to combine and cook for an additional minute, allowing the spices to become fragrant. Turn off the Instant Pot.
  3. Add the lime juice, beer, and beef broth to the pot. Close and seal the Instant Pot lid, ensuring the valve is set to the “sealing” position. Select the manual pressure cook function and set it to high pressure for 45 minutes. The Instant Pot will take approximately 10 minutes to come to full pressure. Once the cooking cycle is complete and the timer beeps, allow the Instant Pot to naturally release pressure for about 10 minutes. After 10 minutes, perform a quick release by carefully turning the valve to the “venting” position until all remaining steam has escaped. Unlock the lid and open it away from your face.
  4. Carefully remove the cooked beef chunks from the pot using tongs. Place them in a large bowl or on a cutting board. Using two forks, shred all of the tender meat until it’s finely pulled apart. Return the shredded beef to the Instant Pot, stirring it thoroughly to combine with the flavorful cooking liquid and spices already in the pot.**
  5. Optional: For an enhanced flavor and texture, turn the Instant Pot back to sauté mode. Add 1/2 cup of your favorite prepared salsa and a tin of diced green chilies to the shredded beef. Stir to combine and heat thoroughly until warmed through. Serve the Instant Pot beef barbacoa immediately in warm flour tortillas, generously topped with fresh shredded lettuce, crunchy carrots, and thinly sliced radishes. Finish with a dollop of sour cream or crema and an extra drizzle of salsa and fresh lime juice! And don’t forget to enjoy with a refreshing glass of Citizen Brewery beer!

Leftover barbacoa meat can be stored in the fridge, in an airtight container for 3-4 days, making it perfect for meal prep.

Notes

*I haven’t tested this recipe with an IPA, so I can only suggest you use a pale ale to ensure the best flavor balance. If you prefer not to use beer, simply substitute it with an equal amount of additional low-sodium beef broth.

**For a thicker, richer sauce to coat the shredded beef, before adding the shredded meat back into the pot, turn the Instant Pot to sauté mode. In a small bowl, whisk together 1 tbsp of cornstarch with 1 tbsp of cold water to create a smooth slurry. Stir this slurry into the simmering liquid in the pot and allow it to bubble and thicken for a minute or two before returning the shredded beef to the pot.
