  • 1 1/4 cup whole wheat flour*
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon
  • 2 eggs
  • 1/2 cup coconut oil, melted
  • 1/4 cup coconut sugar**
  • 1/3 cup maple syrup (or honey)
  • 1 cup mashed banana (~2–3 bananas)
  • 1 tsp pure vanilla extract
  • 1 cup carrots, shredded
  • 1/3 cup walnuts, chopped
  • optional: 2 tbsp rolled oats, for topping
