My recent weekend was a perfect embodiment of this spirit—a truly memorable celebration that started with a wonderful wedding in the breathtaking landscapes of Banff, Alberta. The joy was palpable, friendships rekindled, and the entire atmosphere was simply brimming with love and laughter. We even had a delightful celebrity sighting; Alexander Ludwig, known for his roles in The Hunger Games and, one of my personal favorites, Vikings, joined the festivities as a cousin of the groom. These unexpected moments only add to the magic of such occasions! And yes, the delicious cupcakes from Crave certainly sweetened the deal.
After returning home from all the wonderful food and joyful libations, my husband Etienne and I found ourselves craving something light yet deeply flavorful from our own grill. The perfect inspiration arrived just in time: Frontier Co-op had asked me to develop a recipe highlighting their exquisite table grind sea salt. As a huge enthusiast of sea salt and its incredible ability to enhance and balance flavors, I knew immediately what I wanted to create. The salty-sweet combination is a personal obsession of mine, evident in cherished recipes like my salted caramel chocolate almond clusters and my all-time favorite salted caramel sauce. But before they could meet the flames, I envisioned a delicate marinade to elevate their inherent sweetness and prepare them for the grill’s embrace.

- 4 chicken breasts, flattened
- 4 peaches, halved and pitted
Chicken Marinade
- 1/4 cup soy sauce
- 3 tbsp oil (grapeseed or canola)
- juice of 1 lime (plus zest of 1/2)
- 2 tbsp fresh ginger, grated
- 2 cloves garlic, minced
Peaches Marinade
- 1 tbsp fresh ginger, grated
- 2 tsp sugar
- juice of 1 lime
Instructions
- The night before, or at least 4 hours before grilling, whisk together all of the chicken marinade ingredients. Place the flattened chicken breasts into a large Ziploc bag or a shallow dish, pour the marinade over them, ensure they are fully coated, and refrigerate.
- Approximately 30 minutes to an hour before you plan to grill, prepare the peaches. In a medium-sized bowl, combine the peaches marinade ingredients (grated ginger, sugar, and lime juice) until well mixed. Add the peach halves to the bowl, turning them gently to ensure they are thoroughly coated in the marinade. Let them sit at room temperature.
- Preheat your grill to medium heat. Once hot, carefully place the marinated chicken breasts on the grill grates. Cook for about 10-15 minutes, flipping them halfway through, until an internal temperature of 165°F (74°C) is reached and they are cooked through and juicy.
- When the chicken is nearing completion (approximately 5 minutes remaining), place the marinated peach halves, cut side down, directly onto the grill grates alongside the chicken. Cook for about 3 minutes per side, or until beautiful char marks begin to appear and the peaches are tender-crisp.
- Remove both the chicken and peaches from the grill. Immediately, while the peaches are still warm, sprinkle a generous amount of high-quality sea salt (like Frontier Co-op’s table grind sea salt) all over the grilled peaches. This creates the incredible sweet and salty flavor contrast that defines the dish.
