  • 1/2 cup + 2 tbsp unsweetened almond milk
  • 1/2 cup Nutella
  • sparkling sugar (optional)

Instructions

  1. Preheat your oven to 375 F (190 C). Line a 12-cup muffin pan with paper liners, or generously spray each cavity with a nonstick baking spray.
  2. In a large mixing bowl, whisk together the whole wheat flour, all-purpose flour, baking powder, baking soda, ground cinnamon, and salt until well combined. In a separate medium bowl, whisk together the melted butter and unsweetened applesauce. Add the large eggs and maple syrup, then whisk vigorously until the mixture is smooth and evenly incorporated. Slowly pour in the unsweetened almond milk, whisking continuously until just combined. Gently add the dry ingredients to the wet ingredients. Using a large spoon or spatula, mix carefully until there are no visible streaks of flour remaining. Be careful not to overmix, as this can lead to tough muffins.
  3. Using a cookie dough scoop or a spoon, add about 1 ½ tablespoons of muffin batter into the bottom of each prepared muffin cavity.
