Beet and Orange Salad: A Refreshing & Nutritious Delight
It feels like it’s been far too long since I shared a truly green and leafy recipe, doesn’t it? After a delightful season filled with comforting winter dishes and sweet treats, my palate is craving something utterly fresh, vibrant, and incredibly wholesome. And what better way to welcome a burst of freshness than with a spectacular salad?
For me, salads are the ultimate go-to meal, whether it’s for a quick lunch or a satisfying dinner. The beauty of a well-crafted salad lies in its versatility and the endless possibilities to load it with nutritious, flavorful ingredients. Imagine a bowl brimming with crunchy nuts, juicy fruits, and creamy cheese – it’s a meal that leaves you feeling energized and content, without the heavy, weighed-down sensation often associated with other dishes.
Just yesterday, my meals leaned heavily towards comfort food: scrambled eggs and toast for breakfast, followed by a casual chips for lunch, and a hotdog for dinner. Delicious, yes, but definitely not the pinnacle of health! So, today, my body is practically begging for a reset, a surge of vibrant goodness. And that’s precisely where this magnificent Beet and Orange Salad comes into play, delivering a much-needed dose of wholesome deliciousness.
This salad isn’t just a meal; it’s an experience. It brings together the earthy sweetness of roasted beets, the bright tang of fresh oranges, the nutty texture of quinoa, and the creamy richness of goat cheese. Each component plays a crucial role, creating a symphony of flavors and textures that will tantalize your taste buds and nourish your body. It’s the perfect antidote to culinary indulgence and a fantastic way to embrace lighter, healthier eating without sacrificing an ounce of flavor.

Crafting the Perfect Beet and Orange Salad: A Step-by-Step Guide
This delightful beet and orange salad shares some similarities with my beloved winter citrus salad, but it truly stands out with its unique combination of ingredients and distinctive flavor profile. While assembling the salad itself is straightforward, the key to its exceptional taste lies in the mindful preparation of its core components: the roasted beets and the perfectly cooked quinoa. These elements require a little planning, but the effort is undeniably worth it.
Prepping Your Star Ingredients: Beets and Quinoa
You’ll want to kick off your salad preparation by focusing on the beets, allowing about 30-40 minutes for them to transform into tender, sweet morsels. Begin by peeling your small beets and then slicing or dicing them into uniform pieces. This ensures even cooking. Toss them lightly with a touch of olive oil and a sprinkle of salt, then spread them in a single layer on a baking sheet lined with parchment paper. Roast them in a preheated oven at 375°F (190°C) for approximately 25-30 minutes, or until they are perfectly fork-tender. Once roasted, remove them from the oven and allow them to cool for a few minutes while you move on to the next step. Roasting brings out an incredible depth of sweetness in beets that raw ones simply can’t match, creating a foundational flavor for our salad.
While your beets are roasting to perfection, it’s the ideal time to get your quinoa cooking. Quinoa is a fantastic addition, offering a complete protein and a delightful, slightly nutty texture that makes the salad more substantial. To prepare it, combine ½ cup of uncooked quinoa with 1 cup of water in a small saucepan. Bring the mixture to a boil over medium-high heat, then reduce the heat to a gentle simmer, cover, and cook for 15 minutes, or until all the water has been absorbed and the quinoa is light and fluffy. Once cooked, remove it from the heat and let it cool for about 10 minutes before incorporating it into your salad. This cooling period is crucial to prevent the quinoa from making your salad soggy.
The Zesty Citrus Element
Next up, the vibrant star of the show: oranges! Peel and slice 2 oranges. While regular navel oranges work wonderfully, I highly recommend opting for blood oranges or Cara Cara oranges if you can find them. Blood oranges, with their stunning crimson flesh, not only add a beautiful visual appeal but also a unique, slightly berry-like sweetness that elevates the salad’s flavor. Cara Cara oranges offer a lovely pinkish hue and a less acidic, sweeter taste. Whichever you choose, their juicy segments provide a refreshing counterpoint to the earthy beets and nutty quinoa.

Bringing It All Together: Assembling Your Salad
With all your components prepped, it’s time for the grand assembly! In a large salad bowl, gently combine the fresh baby kale (its tender leaves provide a wonderful base), your choice of candied walnuts (or any other favorite nut for added crunch and healthy fats), creamy goat cheese crumbles, and the beautifully sliced oranges. Once the quinoa and roasted beets have cooled sufficiently, add them to the bowl. The layering of these ingredients is key to ensuring every bite is a burst of balanced flavors and textures. Don’t forget to drizzle generously with our simple yet exquisite citrus dressing (recipe below!) and serve immediately to enjoy its peak freshness. This careful combination of ingredients ensures a harmonious and incredibly satisfying salad experience.
The Secret to Perfection: An Irresistible Citrus Dressing
No salad is complete without the perfect dressing, and for this Beet and Orange Salad, I’ve created a simple yet incredibly flavorful citrus dressing that complements every ingredient beautifully. Its bright, tangy notes cut through the richness of the goat cheese and enhance the natural sweetness of the beets and oranges, bringing the entire dish into perfect harmony. This dressing is refreshingly light, yet packed with enough character to elevate the salad from good to truly exceptional.
The beauty of this dressing lies in its minimal ingredients and ease of preparation. You’ll need:
- Avocado Oil: I prefer avocado oil for its neutral flavor and healthy fat profile, but a good quality extra virgin olive oil would also work beautifully.
- Maple Syrup: Adds a touch of natural sweetness that balances the citrus tang without being overpowering. It also helps in emulsifying the dressing.
- Fresh Lemon Juice: Provides a zesty brightness and essential acidity. Always opt for fresh-squeezed for the best flavor.
- Pure Orange Juice: Reinforces the orange flavor in the salad and adds another layer of fruity sweetness.
- Dried Mustard: A secret weapon in many dressings, dried mustard (like ground mustard powder) acts as an emulsifier, helping the oil and vinegar (or juices in this case) stay blended. It also adds a subtle, peppery kick that enhances other flavors without dominating.

Preparing Your Dressing
Making this dressing couldn’t be simpler. Just combine all the ingredients in a mason jar or any leak-proof container. Secure the lid tightly and shake vigorously until all the ingredients are well combined and the dressing is emulsified. The result is a smooth, luscious dressing ready to drench your salad. You can adjust the amount to your preference, but I recommend starting with a generous drizzle and adding more as needed. Its super refreshing flavor will instantly brighten your salad and awaken your palate.
Expert Tips for Storing Leftover Salad and Dressing
One of the best things about making a large, wholesome salad is the potential for delicious leftovers. However, for a salad as fresh and vibrant as our Beet and Orange Salad, proper storage is key to maintaining its integrity and taste. If you anticipate having leftover salad, a crucial tip is to always store the dressing and the salad ingredients separately. This simple step prevents the greens from wilting and other components from becoming soggy, ensuring your salad remains crisp and appetizing for future enjoyment.
The undressed salad ingredients (roasted beets, cooked quinoa, baby kale, oranges, candied walnuts, and goat cheese) will keep beautifully in the refrigerator. Transfer them to an airtight container, and they will stay fresh and flavorful for approximately 3-4 days. This makes this salad an excellent choice for meal prepping, allowing you to enjoy a quick and healthy lunch throughout the week without extra effort. For best results, keep the more delicate ingredients, like the kale, slightly separate or layer them carefully within the container.
As for the citrus dressing, it is remarkably stable and can be stored at room temperature, although keeping it in the refrigerator will also prolong its freshness, particularly in warmer climates. Simply give it a good shake before serving to re-emulsify any separated ingredients. This flexibility means you can prepare a batch of dressing ahead of time and have it ready to go whenever a salad craving strikes.
Don’t miss out on the opportunity that citrus season offers! It’s the perfect time to embrace the bright, zesty flavors of fresh oranges and combine them with other incredible ingredients to create crunchy, crisp, and immensely satisfying salads. This Beet and Orange Salad is a testament to how simple, fresh ingredients can come together to form a truly extraordinary dish that delights both the eye and the palate. Make it today and savor the vibrant flavors!
