Embrace Effortless Mornings with Two-Ingredient Pancakes
Weekday mornings often feel like a whirlwind, especially when you have little ones. Around our home, the alarm clock usually signals the start of what can only be described as delightful chaos! My boys are early risers, eager to start their day, and seemingly always hungry from the moment their feet hit the floor. Within minutes of waking, the requests for snacks begin, so I’ve mastered the art of getting a nutritious breakfast on the table as quickly as possible. This strategy not only satisfies rumbling tummies but also protects my living room carpet from stray cereal crumbs!
Before becoming a parent, my breakfast routine was a simple, perhaps even boring, bowl of plain oatmeal sprinkled with cinnamon. Functional, yes, but hardly inspiring. Life with kids, however, demands creativity in the kitchen. Trying to serve plain oatmeal to a picky toddler is a battle no parent wants to fight! Thus began my quest for exciting, yet effortless, breakfast options.
While I adore making special breakfasts when time allows, like my delightful green monster donuts – which are a huge hit and sneak in plenty of nutrition – these more elaborate dishes aren’t always feasible. On those mornings when every minute counts, I need reliable, quick-fix recipes that deliver on taste and health without the fuss. This is precisely where the magic of these two-ingredient pancakes comes in. I can’t express how many times these simple pancakes have been a lifesaver, quite literally saving my breakfast plans (and my sanity!) on countless busy days.

What Makes These Two-Ingredient Pancakes So Special?
The beauty of this recipe lies in its incredible simplicity and profound nutritional benefits. As the name suggests, you only need two core ingredients: one very ripe banana and two large eggs. That’s it! Just two wholesome ingredients combine to create surprisingly delicious and satisfying pancakes that cater to everyone from babies starting their weaning journey to hungry adults.
These pancakes aren’t just easy; they are packed with goodness. Bananas provide natural sweetness, essential dietary fiber, and potassium, which supports heart health and muscle function. Eggs, on the other hand, are a powerhouse of protein, vital for growth and satiety, along with crucial vitamins and minerals like iron and choline. For babies, this combination offers a fantastic source of nutrients without any added sugars or artificial ingredients. They are naturally sweet, soft enough for tiny mouths, and perfectly sized for little hands learning to self-feed, making them an ideal choice for baby-led weaning. Plus, their naturally gluten-free and dairy-free composition (when cooked with suitable fat) makes them accessible for various dietary needs.
Mastering the Art of Making Two-Ingredient Banana Pancakes
Creating these delightful pancakes involves just three straightforward steps. The key to success lies in a few simple tips and a little patience.
- Mash a large, very ripe banana in a bowl: The ripeness of your banana is paramount. Look for a banana with plenty of brown spots on its peel; these are the sweetest and easiest to mash. Use a fork or a potato masher to break down the banana into a smooth, consistent paste. While a few small lumps are perfectly fine and add a bit of texture, strive for as smooth a base as possible, as this will help with the pancake’s structure.

2. Add two large eggs and whisk thoroughly: Once your banana is mashed, crack in two large eggs. Whisk the mixture vigorously until the eggs are fully incorporated and the batter appears mostly smooth. Don’t stress about achieving a perfectly lump-free consistency; a few tiny banana pieces are completely normal. The goal is to ensure the banana and egg are well combined, forming a pourable batter. This blending creates the essential structure and texture for your pancakes.

3. Fry your pancakes to golden perfection: Heat a non-stick frying pan over medium heat and melt a small pat of butter or a teaspoon of coconut oil. The choice of fat can influence the flavor and cooking, but both work well. Once the pan is hot and the fat is shimmering, pour small amounts of the batter – about a quarter cup per pancake – into the pan. Resist the urge to make them too large, as smaller pancakes are much easier to flip without breaking apart. Fry for about 2-4 minutes per side, or until the edges set, the bottom is golden brown, and you see small bubbles appearing on the surface. Carefully flip and cook for another 1-2 minutes until both sides are beautifully golden. Remember to add a tiny bit more butter or oil between batches to prevent sticking and ensure each pancake cooks evenly. Patience is key here; don’t flip too early, or they might crumble!

And just like that, you have a stack of warm, inviting pancakes ready to be devoured!
Creative Serving Suggestions for Your Banana Egg Pancakes
These versatile pancakes are delicious on their own, especially for babies and toddlers who will happily gobble them up plain. However, for older kids and adults, a few simple additions can elevate them into an even more delightful breakfast experience. Here are some of our favorite ways to serve two-ingredient pancakes:
- Classic Sweetness: A drizzle of pure maple syrup or a dollop of honey adds a traditional touch that pairs wonderfully with the banana flavor.
- Fresh Fruit Power: Top with an assortment of fresh berries like strawberries, blueberries, or raspberries. Sliced bananas or a medley of seasonal fruits also work beautifully, adding extra vitamins and a burst of freshness.
- Creamy & Tangy: A spoonful of Greek yogurt or a swirl of whipped cream (dairy or non-dairy) provides a lovely creamy contrast. You can even sprinkle a few granola pieces for added crunch.
- Nutty Boost: For a protein and healthy fat kick, spread a thin layer of almond butter, peanut butter, or cashew butter. Be sure to check for allergies, especially when serving to young children.
- Warm Spices: A sprinkle of cinnamon or a tiny dash of vanilla extract stirred into the batter can add an extra layer of warmth and aroma.
- Chocolatey Treat: For a slightly more indulgent (but still healthier) option, a few mini chocolate chips can be folded into the batter or sprinkled on top while cooking.
For baby-led weaning, these pancakes are perfect as they are – soft, easy to chew, and packed with natural goodness without any extra fuss. Just ensure they are cooled enough for tiny hands to safely handle.

Storage and Reheating Tips for Convenient Breakfasts
One of the best features of these simple pancakes is their make-ahead potential. Any leftover pancakes can be stored in an airtight container in the refrigerator for up to 2-3 days. They are fantastic to enjoy the next day – simply pop them into a toaster, microwave, or warm them gently in a pan until heated through. For longer storage, you can even freeze them! Layer cooled pancakes between sheets of parchment paper in a freezer-safe bag or container, and they will keep well for up to a month. Thaw them overnight in the fridge or reheat directly from frozen on a low setting in the toaster or oven.
