  • 1/3 cup granulated sugar
  • 1 egg, room temperature
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk
  • 1 large apple, finely chopped*
  • Shredded coconut, mini chocolate chips, toffee bits, chocolate drizzle, chopped nuts, etc. for decorating (optional)

Caramel Frosting

  • 1 cup brown sugar
  • 1/2 cup unsalted butter, cubed
  • 1/4 cup milk + 2 tbsp*
  • 2 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 12-cup muffin tin by lining it with cupcake liners.
  2. In a medium-sized bowl, sift together the all-purpose flour, baking powder, cinnamon, ground ginger, and salt. Set this dry mixture aside.
  3. Using a stand mixer fitted with the paddle attachment, or an electric hand mixer, beat the room temperature unsalted butter on high speed for approximately 1 minute until creamy. Add both the brown sugar and granulated sugar, then continue to beat on high until the mixture is light, fluffy, and well combined. Incorporate the egg and vanilla extract, beating for another minute or so until fully blended. Gradually add half of the sifted dry ingredients, mixing slowly until just combined. Next, pour in the buttermilk and mix gently. Finally, add the remaining dry ingredients, beating until just incorporated. The batter will be quite thick. Gently fold in the finely diced apple using a large wooden spoon or mix on low speed until the apple pieces are evenly distributed.
  4. Divide the cupcake batter evenly among the 12 prepared cupcake liners. Bake for approximately 22-25 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Allow the cupcakes to cool in the muffin tin for 5 minutes before carefully transferring them to a wire rack to cool completely. This step is crucial before frosting!
  5. Prepare the rich Caramel Frosting. In a medium saucepan, combine the brown sugar, cubed unsalted butter, and milk over medium-high heat. Stir continuously until the butter is completely melted and the brown sugar has fully dissolved. Bring the mixture to a gentle boil and let it bubble over medium heat for 5-6 minutes, or until it deepens into a rich amber color. Be careful not to burn it. Remove the caramel mixture from the heat and transfer it to a mixing bowl to cool down to room temperature.
  6. Once the caramel mixture is cool, use your stand mixer with the paddle attachment or an electric mixer. Gradually add the powdered sugar, one cup at a time, beating on high speed. You may find, as I did, that you need to add a bit of extra milk (about 2 tablespoons, or more if needed) to achieve the perfect pipeable consistency (refer to notes for guidance). Continue to mix on high until the frosting is stiff, smooth, and ready to be piped or spread onto your cooled cupcakes.
  7. Generously frost each cooled cupcake with the luscious caramel frosting. Decorate them with your chosen toppings such as shredded coconut, mini chocolate chips, toffee bits, a drizzle of chocolate, or chopped nuts. For an authentic fair food presentation, consider adding a small lollipop stick or a pretzel stick into the center of each cupcake to mimic real caramel apples.

  1. While I prefer the tartness of Granny Smith apples for this recipe, any firm apple variety will work beautifully. One large apple typically yields about 1 1/2 cups once finely chopped.
  2. The original caramel frosting recipe suggests 1/4 cup milk, but I found that after adding the powdered sugar, the frosting was often too stiff. I recommend adding approximately 2 additional tablespoons of milk when blending the caramel with the powdered sugar. Feel free to adjust the amount of milk, adding it one tablespoon at a time, until you achieve a smooth, creamy, and easily pipeable consistency.
