  • zest of 1 lemon

Instructions

  1. Begin with making the lavender-infused milk. Add 1 tablespoon of dried culinary lavender to 3/4 cup of whole milk in a small pot. Bring to a gentle boil over medium heat. As soon as it boils, remove from heat, cover with a lid, and let steep for 30 minutes.   2. In the bowl of a stand mixer fitted with the paddle attachment (or a large mixing bowl), combine the yeast with the 1 tablespoon sugar and the warm lavender-infused milk.   6. Place a 3-inch wide glass or bowl in the center of the dough stack to create a clear indentation (do not cut through). Using a pizza slicer or sharp knife, cut the dough into 16 equal strips, radiating outward from the indented circle to the edge. Take two adjacent strips, and with two hands, twist each strip away from each other twice. Bring the twisted ends together and firmly pinch them to seal, forming a point of the star. Repeat this process with the remaining 14 strips of dough around the circle. Once all points are formed, cover the star bread loosely with a clean towel and let it rest for 20 minutes for a final proof.
  7. Preheat the oven to 350°F (175°C). After the resting period, gently brush the entire surface of the star bread with the egg and milk wash using a pastry brush.
